A zesty, fruit-filled New York-style cheesecake with raspberry and lemon. legokingiscool: INGREDIENTSButter For Greasing550g cream cheese, at room temperature160g Caster Sugar3 Eggs, lightly beaten2 tbsp Plain FlourFinely grated zest of 1 Lemon200g Raspberries (I will probably sub out the raspberries with something else)Try adding a splash of vanillaMethodPreheat the oven to 180C and butter a 23 cm spring-foam cake tin. Beat together the cream cheese and sugar. Add the beaten eggs bit by bit until combined. Add the flour and lemon zest, then fold through the raspberries. Spoon the mixture into the prepared cake tin, tapping it against the work surface to remove any bubbles and help the raspberries rise up from the bottom. Bake in the preheated oven for 35 minutes until set on the edges but wobbling slightly in the middle. Now I do not know why it was not included in Ramsays recipe; however, I find a Bain Marie to be rather a necessity for cooking a cheesecake. So add an oven-safe bowl of boiling water from a kettle into the oven to prevent the cake from cracking. Once cooked, remove from the tin, running knife around the edges to loosen if necessary, and serve. If you use raspberries try serving the cheesecake with a chocolate sauce. Have fun cooking,

Question mr. Ramsay, please, my favorite cake its newyork cheesecake and I would like to make one for my birthday that does have a cookie base but when it comes to the mix itself I would prefer something smooth but not too plain or overwhelming like too much chocolate, which do you think would be the best recipe or type of flavor?

Line your pan with double parchment and bake in a water bath. I dont know why these you tube cooking videos dont include the tips one needs to make the dish successful. Also, always use less egg than they say in the video or it becomes a runny mess.

It tastes better when you cook it with your heat really low, use a pan under your spring form pan, fill with water, your cheesecake and springform sit in the water bath while cooking. It makes it sooo creamy, silky and to die for

Honestly, if your technique is good, you shouldnt need flour to keep it from being lumpy. Just soften the cream cheese sufficiently, add the egg slowly, and whisk the crap out of it.

I tried the cake and it had to bake longer than 30 minutes. What size of pan did he use? You have to use a water bath or else it cracks. He uses a cream cheese spread not a brick.

Ok ok, I know NY cheesecake doesnt have a biscuit base. But I love the contrast between the crunchy base and the luscious top, so I use one. Takes this yummo recipe to another level.

Why does he not ever provide measurements in his baking videos? Like, at least in the description? Super annoying for those of us who didnt go to culinary school.
