Before considering yourself a chef, I think you should learn to see the importance of food first. You can't just throw away food even if they're just trimmings. You could eat them yourself, you know. I mean this isn't even in a restaurant setting so eating the trimmings is perfectly fine. And that's a lot of soy sauce you're wasting, by the way. It just makes me wonder if you also threw away the center of the cucumber after slicing it for the sushi skin. Really, what a waste.

i think you are fantastic, and i love watching your videos. i only just had my first experience eating sushi a couple weeks ago, but i loved it so much, i looked for some videos on how to make it on YouTube, and found you! if it wouldn't be too much trouble, could you make a video on how to make salmon tempura? that is currently my favorite, thanks!

Guys, he's joking when he says to throw it away. That's why he emphasized it so much and said it in that way and laughed. In all his videos he gets comments about him throwing them away. He doesn't though as in some videos you can see him sneak a piece in his mouth and now he explicitly tells you that it goes into the chef's stomach

lol, i am well aware of the little cog. x3 then perhaps there is something with the lighting where you make your films, or maybe the camera settings, cos the picture i am getting is somewhat off. it looks very good, but something is off. but i'm just a quality freak. :p

this guy very slow. but if u do this. you don't need to freakin dip ur knife in water. the cucumber is already super wet. u just need a very sharp knife to do it easier but he teaches wrong and i do this in like 15 secs

The two ends throw away REALLY? what a waste! Get a decent plate or board, put all the pieces on it, stick on some daikon, wasabi and ginger and hands off that Soy Sauce bottle. Shesh! Great vid otherwise, Thanx.

It seems like you're self taught, pretty good for amateur. Only advice i can give you is, I saw many sushi chefs using garnish as the center of decorating plate but food should be the center not the garnish.

I thought soy sauce is barley used in sushi its usually one small dip with no shake and then eat it? Maybe it taste better covered in soy sauce idk but it seems like the point is to taste the sushi not hide it

This is also the same technique for cutting daikon radish for sashimi garnish, although once you have the sheet you would cut thin slices, which is the same for doing cucumber rectangles for sushi rolls.
