This is not sushi. Sushi involves vinegar and rice. Calling this sushi is contributing to the misconceptions about what sushi really is, primarily that it necessarily involves raw fish. You are doing real professionals a great disservice when you do this and making their jobs more difficult.

You're an amazing sushi chef but don't you know that sushi is all about rice? If you don't have rice [fermented] in the dish you can't call it a sushi? Sushi is basically a rice with sea fruits on it.
