Cook a lazy meal with me. This lazy chicken recipe makes the best tender chicken drumsticks. I am making an easy chicken dinner using my slow cooker and the Boursin cheese mashed potatoes hack for a comforting meal. The chicken literally falls off the bone and the potatoes are amazing. This is gonna be good! INGREDIENTS 3 1/2 to 4 lbs chicken drumsticks 2 Tbsp all-purpose flour 1 Tbsp Montreal chicken seasoning 1 Tbsp chicken bouillon powder 2 tsp all-purpose seasoning blend 2 tsp salt-free lemon pepper 2 tsp onion powder 2 tsp garlic powder 2 tsp smoked paprika 6-quart Crockpot cook on high for 3 to 4 hours

A couple of thoughts.
It is Sunday, January 7th and I just started to take down Christmas decor. Welcome to my world.
Love putting it up and nobody likes taking it down.
We are not alone. :)
Russets are the best for mashed potatoes. Cooking with some chicken bouillon powder adds so much flavor. Never doubt that. If peeps don't like it, they can do it another way. Their choice.
The addition of Boursin is great in mashed potatoes.
Happy New Year.

Angelica. this looks really good. What do you think of the chances of doing it in a dutch oven on a low oven temp? Maybe 250 or so? I don't own a crock pot these days. I had one of the fancy electronic ones and it died after only about a year and I just never replaced it. I'm not a fan of asparagus but I'd just do green beans instead. Love the idea for the mashed potatoes. I bet those are great!

Delish! Im definitely putting this on my dinner menu when the asparagus is on sale! Ill have to skin the chicken though. Not a fan of it in that soft fatty texture. Crispy yes. I also use lemon pepper on my asparagus with minced garlic and Tableblend. Sometimes with a squeeze of lemon mixed in too. Hopefully, I can find that Boursin cheese in my stores here.

Any non waxy potatoes are great for mashed potatoes. Also you really don t need to cut that much off asparagus such a waste plus the asparagus you had would be so tender. I m not being a b I m just giving tip that s all. Your dinner looks delicious. Never had that cheese in mashed potatoes but for sure going to try them yummers.

I agree with you on everything you said! Lots say the other potatoes are better but I prefer russet potatoes too! Also, I just saw where if you wash the potatoes and then peel them, you take the potato peels and fry them and I would be into trying that idea! Love eating the skin!

Thank you for sharing this recipe! I got a slow cooker pot as a gift but I ve never used it, growing up my mama and abuelita just cooked the meats for hours and still do! They refuse to use a slow cooker. Thank you for the tips for making the potatoes I m definitely going to make these!

Simple jack on the mashed pots. Use the chicken stock water you have there and instead of milk, use a few tablespoons of sour cream. You can still use the Boursin. The chicken stock helps smooth the mashed pots and the sour cream makes the flavor creamier and rich tasting.

Everything you crank out looks delicious lazy day or not. Those chix drums look delicious and I don t really love them. I have to try the Boursin cheese in my mashed tasters in place of butter. I buy it all the time but never used in mashed potatoes. YUM!

This looks delicious, Angelica! We have leftover tri-tip from last night, so that will be our protein. I have potatoes, fresh asparagus and Boursin, so I'll just steal your idea for the sides, LOL.

FYI: asparagus grows as single spears from the ground. The woody ends will vary from spear to spear. Cutting them all based on one will either waste a bunch of good veg, or leave some woody ones.

Lol my tree and a few decorations are also still up. I didn't get mine up until right before Christmas so not in a hurry to take down as I truly do enjoy the lights. Recipe looks delicious

Angelica, I break the asparagus stalks in the store and toss them in produce trash bin. My produce worker doesn't mind and that way I don't pay for what I won't use. I shop at Heb.

I can smell this meal even through my phone right now. That's how good it looks.
With a small glass of red wine, I'd be in a 5 star restaurant heaven.
