Here is a delicious recipe for a super crunchy cheesy chimichanga. You can use store brand flour tortillas or for a tasty version, you can make tour own homemade soft flour tortillas. The recipe link for those is below. Chimichangas are basically a deep fried burrito that can be garnished or dipped in your favorite sauces, salsas and fresh ingredients. INGREDIENTS 1 1/2 lbs to 2 lbs cooked shredded chicken 1 1/2 tsp chili powder 1/2 tsp garlic powder 1/2 tsp onion powder 1/4 tsp ground cumin salt to taste 8 to 10 large flour tortillas FLOUR TORTILLAS RECIPE 8 oz cheese of your choice (I used colby jack cheese) oil for frying

I make these all the time. but instead of boiled chicken I use rotel in a pan. I use maybe 3 to 4 breast. while the chicken is cooking I add a can lime rotel juice and all. then add cumin, garlic powder, onion powder, and salt to taste. As it s cooking i start shredding the chicken in the pan. you get much better flavor this way. When wrapping I use shredded Mexican blend cheese. I use a deep fryer with a basket and when I put them in I hold down with tongs for a bit to make sure it seals. cook till golden brown. I top with fresh pico de Gallo, fresh guacamole, a few black beans sour cream a sprinkle of Mexican blend cheese and just a hint of lime. I know it sounds way out there but it s really good and very filling. hope you enjoy.

I messed up the recipe you posted for the tortillas (and left a comment, but I will try again at a later date), so I bought tortillas and prepared this. I have to say, this was a HIT! I've made quite a bit of dishes that I found so that we're not cooking and eating the same foods, and many don't make the list (you know, the list of foods that everyone begs you to make because they have a craving for it. This was IMMEDIATELY put on the list. Thank you for sharing this

I was very interested in seeing this video, but you constantly saying tortilla as you did was too annoying. It was like you were trying to find reasons to say it and then suddenly I COULD NOT watch another minute. If you're speaking perfectly normal English in the rest of the video, can you not just say tortilla in the same fast way?

I was taught how to make chimichangas by an actual Mexican friend of mine. It is nothing even resembling what you ve made here. Where did you find this recipient? It s kind of like enchiladas, but not! Chimichangas are like Mexican goulash! NOTHING like this! Wrong recipient. You should rename it, seriously.

These look really good! I make something similar. I use egg roll wrappers and use a mixture of ground sausage, sauteed mushrooms, finely chopped ginger, and shredded mozzarella. I cook/melt the mixture before wrapping and frying. I call them italian egg rolls. Wonderful to dip in sweet and sour or bbq sauce.

I love trying new things with boneless chicken / chicken breasts. I think most of us have had a chicken chimi before but when sitting at hom (especially now durin this corona lockdown) sometimes these things dont pop into your head. Will be saving for future use.

Do you think I could substitute gluten free flour for the regular? My mom has celiac and she cant have wheat, flour and things like that and really want to make homemade gf tortillas so we can make alot more things then just using corn tortillas

Can't wait to try this. Thanks for sharing the recipe. Such a fun, easy dish to enjoy with family! Had a question, as my wife said she wanting to avoid fried foods for right now, is there a version of this made in the oven, by chance?

I made some this morning with leftover ham stir fried with a little garlic, onion, minced green olives and a little parmesan Romano the colby jack cheese and some scrambled eggs. Topped with sour cream and salsa. They were outstanding!
