Today my son requested his favorite enchiladas for dinner. I typically use ground beef, but my son loves the ground turkey version even better. You can also make this a great chicken enchiladas recipe as well Ingredients 1 lb lean ground meat of choice 2 tsp light chili powder 1/2 tsp ground cumin 1/2 tsp granulated garlic powder 1/2 tsp granulated onion powder 1/2 tsp salt pepper to taste 14 to 16 corn tortillas 1/3 cup oil (for softening corn tortillas) 12 oz Colby Jack cheese Enchilada red sauce ingredients 4 Tbsp cup oil 1/4 cup all-purpose flour 2 Tbsp light chili powder 1/2 tsp ground cumin 1/2 tsp garlic powder 1/2 tsp onion powder 14. 5 oz can of chicken broth extra water if needed salt and pepper to taste You can substitute the broth with 16 oz of water and 1 Tbsp chicken bouillon powder Lynne: I love this recipe. I never have enchilada sauce in my pantry, but I do have pretty much all of the spices that you used for this recipe. It looks so delicious. I cannot wait to dry it.

This is one of my staples I make almost every week. I stopped cooking my tortillas in oil long ago though. I steam them on a flat grill until they are soft and roll them that way. Ive never had a texture problem and if you are worried about them falling apart just leave them on the grill for an extra 10 seconds and they will just start the hardening process. Still super pliable and easy to build but without all the excess oil.

I love making enchilada sauce this way! It comes together really quick. My great grandma would make her quick red chile this way; she'd fry the pork, making the roux with the rendered fat, and then season it up similarly to how this was! We ate it with beans, tortillas, and/or rice.

I'd love to pick your brain since you're a Bolners girl like me! What's the flavor or texture diff between your enchi sauce and the actual Bolners enchilada sauce? I am soooo curious!

It s very thoughtful of you to consider some watchers preferences who don t wish to use the powdered bullion. Including an alternative recipe is so helpful.

Nothing like cooking a request from a loved one. Mine regularly comes up with delicious creative ideas when I ask (and claims she can't cook! Hmm)
