my question is for the sauces? what is best with a roux? besides broth? a sour cream, cream cheese, or cream and I add cheese into the sauce to melt it too? I made cilantro poblano jalapeno in sauce but had no cream or sour cream or cream cheese so I made a roux then added broth, water and can of creamed chicken soup instead and added into it the rice cooked already and it is very tasty. lots of cumin then some lawry coriander and one squeezed lime juiced too. scallions. no garlic so used onions and garlic powders too. mix veg was chopped green beans carrots peas corns

why did you add Colby cheese, not pepper jack? any lime juice cumin? cilantro? also king ranch is to me made with bacon sour cream ranch powder scallions onions garlic chicken bag mixed veg or else cheddar cheese? etc. these casseroles are yummy. you gave me an idea to add Chipolte adobo into a chicken mole? with dark chocolate? nuts seeds etc. besides dried chilies? paste cinnamon etc.

I m going to give it a try, I like the way you did it without the can of soup and the smaller version of the recipe, because with a 13 x 9 I always had a lot of leftovers. Thank you

Never heard of King Ranch casserole. I usually shy away from casseroles cuz Mom made theee CRAPPIEST casseroles known to man. But yours looks good tho.
