From what I understand my distant relatives were from Sicily and who knows if we do it the same way they did or not (probably not, because things change with time and generations) but we live in Cleveland, Ohio and make our sauce with canned sauce, paste, powdered parmesan, dried basil, water, grease from cooked meat, dried parsley, salt, pepper, garlic powder, and meat (DiRusso sausage, pork ribs, meatballs, mushrooms, or whole boiled eggs) and sometimes some sugar depending on how acidic it tastes. Let it cook for about 4hrs and its done. As for the lasagne we just layer sauce, whatever meat were using, low moisture part skim mozz, and the lasagne noodles. Pretty sure my grandma used ricotta but my mom never did. Just mozz. So that kind of shows you how things change slightly from generation to generation or depending whats on hand or even from house to house even if the houses belong to the same family!

I'm definitely going to have to try this. I love ricotta cheese in my lasagna however I have not tried this before so definitely going to try it probably tomorrow or Monday. Thanks for all these post.
PS I have to say that your cream cheese chicken enchiladas and beef enchiladas my boy's have me make at least once a month. Mom likes chicken and green sauce andy boy's like beef and red sauce so I have to make two different pans and I always say that it's okay because I won't have to Cook the next night. Yeah well it never makes it to the next night. lol. I take that as a good thing. They must love it or it wouldn't be gone in less than 24 hour's.

My birthday is on 12th maybe I fix for that week but it s just me and my adult son so I ll separate in two dishes and freeze one I think.

Looks so good. I used to make lasagna at least once a month for my family. I used to do up a large pot of sauce. We had spaghetti one day, Lasagna the next and with whatever sauce was left over I turned that into chili the next day. I like the way you did the lasagna. I have Italian roots and everyone in our family does Lasagna a little different from each other and it's all good.

Had to laugh at your attempt to ward off the Italian food police. Nice video for a easy and delicious lasagna. My only criticism/comment would be to use better noodles. Overwhelming consensus I've gathered is Barilla is crap. If you've got the bank to spring for the Rao's, go ahead and get good pasta as well.

I was watching and it looks soooo good. I'm going to make it your way and make 1 with the ricotta cheese. And then I may try 1 with both. I really love lasagna. Can you tell? I'm 61, live by myself in assisted living and whatever I cook I share my friends. I guess I will do a lot of cooking this month.

Looks delicious as usual! All of your recipes do. Re bechamel sauce - I've noticed that when I've watched videos of British people making lasagna they use a bechamel sauce rather than ricotta. I prefer ricotta (vegan version since I'm vegan) but the bechamel version is nice too.

This is way out of the ordinary for me but I will try it at least one time but I am a Cajun and you would never get away with that recipe in Southwest Louisiana you have to put way more ground meat between the layers way more Parmesan cheese

Everyone does lasagna differently. I m sure it varies region to region. My mom s family is originally from the Rome side. Ricotta is what always went in our lasagna. To this day I love ricotta and can eat it plain.

I always use water instead of stock. Well 98% of the time anyway. Stock can be so salty and I have to watch my sodium so water is a better alternative.

I like either one. cottage cheese or ricotta. I add a few red pepper flakes to my sauce to give it a tiny kick.

Do you have issues with the ready to go pasta? I tried them and they had no texture. Completely mushy. I used the temp and bake time on the box.

Most Australian's make lasagna with Bechamel in between the layers. However, my sister does ricotta. But I prefer Bechamel.
