Here are budget-friendly recipes that save me money. Homemade beans or store-bought canned beans are staples in my home and are economical. The bean and cheese taco is not only a comfort food but got my family through hard times. ENFRIJOLADAS 1 1/2 cups charro beans 3/4 cup bean broth 1 Tbsp chopped chipotle peppers in Adobo sauce 8 to 10 corn tortillas 10 oz queso fresco BEAN & CHEESE Tacos (or burritos) TORTILLAS INGREDIENTS 3 cups all-purpose flour (400 grams of flour) 2 tsp baking powder (7. 5 grams baking powder) 8 oz hot water (236. 59 ml water ) 1/3 cup butter, lard, or shortening (65 grams) Use only 1/4 cup (59 ml) if using oil 1 tsp salt (5 grams salt) INGREDIENTS FOR REFRIED BEANS 1 1/2 Tbsp bacon fat 1/4 cup diced onion 4 cups cooked pinto beans 1 tsp chili powder 1 tsp garlic powder 1/2 tsp smoked paprika 1/2 tsp ground cumin Salt and pepper to taste INGREDIENTS FOR AGUA DE PEPINO CON LIMON 1 large cucumber 1 large lime 1/2 cup sugar 3 cups water pinch of salt 1 lb of ice

Even more budget friendly, when you're down to only the bean liquid of a pot of beans, just heat the liquid to thicken for enfrijoladas.
Baking powder isn't necessary for tortillas since they are a flat bread. I never use it. Yes, to homemade beans and tortillas to help that budget.
Never throw out perfectly good food. Think of what you can use with those bits of leftovers.

Girl I haven't had this in years WOW thank you for reminding me about enfrijoladas really thank you you brang back so many wonderful memories of my GRANDMAMA this video didn't do your food justice I have tried some of your family recipes and they are delicious and always look good too well in my opinion going to go back to the store tomorrow to grab me some frijoles

I really need to thank you. Many of your recipes have found a way into my own recipe box. They're simple, inexpensive and tasty. Our introduction to the tomato chicken soup base has been a homerun with everyone in my family.
The cucumber punch is definitely one of them! I'm making it tomorrow, maybe with a splash of tequila.

Ugh, that jar of chopped chipotles is hard to find at my HEB ever since the pandemic hit. They have it every once in a while, I always grab a bunch. I don't like stuff in cans if I can get it in glass.

why you boil the SALSA - i use practically same ingredients but i just blend - maybe i like the colder temp salsa - roasted i get but boilded - i dunno - maybe

Beans, tortillas, and potatoes my favorite foods growing up, salsa came later when I got older. It was struggle food, but we didn't know it at the time.

Call me weird but I miss guvment cheese! I would eat guvment cheese melted in a corn tortillas. Best after school snack. You are the real thing girl.
