85 Years-Old - PAD THAI LEGEND (No Shrimp, No Tofu)

PAD THAI: We drove about an hour and a half outside of Bangkok to a province in Central Thailand called Ang Thong. We came to search out a lady who has been making Pad Thai for over 45 years, and shes now over 85 years old. #PadThai #ThaiFood #streetfood Pad Thai Ba Lek ) - I loved the shop and the laid back atmosphere, in the countryside, surrounded by rice fields. As soon as we arrived and I started watching Ba Lek make her pad Thai, I could see there were many differences from the pad Thai normally cooked modern style in Bangkok. Her version didnt included any shrimp or tofu (but instead tons of duck eggs, and it was a totally different school and method of cooking. Instead of being a dry stir fry, it was more of a wet juicy fry, or a simmer in palm sugar syrup and tamarind. It was an honor to watch Ba Lek make pad Thai, her expertise, skill, and knowledge of how to cook it, was astounding. I ordered the bigger sizes plate which included two duck eggs. Overall, the taste was extremely rich from the duck eggs and the amount of lard she used to fry it. It was very sweet, but then again, it wasnt a sharp sweetness because she used only palm sugar, but it was balanced by the saltiness and tartness of the tamarind. The duck yolks and lard made it so filling and rich. Price - 35 THB (1. 13) An amazing experience, and shes a true hero of Pad Thai in Thailand

best pad thai we had was on Samui back in 2012. near family mart at the corner of gogo square on one way road in Lamai. in 2012 old Thai lady was pouring some blackest sauce I've ever seen, taste was mind blowing. when we later visited her in 2016-17, the sauce was lighter and taste of dish just regular: -(also best pineapple cashew nut fried rice was found in 2012 at Lamai tesco lotus. and we were unable to refresh our memories of pineapple cashew nut later years, tried in diff locations of bkk, samui, phuket and krabi.

I'm not a fan a sweet food too but i like the respect you have for the old lady. Here in our country stewed banana blossoms with fermented soybean, chillies, basil is very common and it's tasty. And you can add what you want too. Depends on how you like it. Btw, soak the banana blossoms in cold salted water for a few minutes to get rid of the chalky taste.

I 've been there for 2 years. IMHO, the Angthong, Singburi and Chainat version of Pad Thai is the best version. Super sweet but refreshing with green mango or star fruit, the creaminess of duck eggs is hard to beat and star of the show is noodle which absorbed all deliciousness. BTW, some Chainat Pad Thai stalls/res have little dried shrimps.

This looks good Interesting that she managed to make it so good without including shrimp and tofu which are staples with most pad thai. I'm impressed. But then again, Mark Wiens always has that _signature_ face he makes when he eats food that makes you _really_ want to eat it as well. (13: 15 14: 56 15: 47)

Im Thai, I have never tried pad-thai in this version. I just know that it can go well with green mango. I think we have many versions of pad-thai in Thailand. I wanna try this one Thanks for sharing.

You are king of food bloggers, Mark, Pad Thai is one of the most common and famous of Thai food but you find the best version and show cased for us. Great search to find best of every food is your forte and specialty.

I had pad thai only once in kolkata, it was pork pad thai. It's too sweet. I can't except to end a meal without desserts but at the same time i cannot eat something as sweet as pad thai in a main course.

Headed to Koh Phi Phi/Ao Nang/Koh Lanta and Krabi for the month of November. Any recommendations for Pad Thai in these areas would be greatly appreciated Mark. Thanks for all the awesome food vids.

Pad Thai in the US costs at least 8 times that. And it wouldn't be nearly as good. I also love the fact that every bowl they used was different. This is a restaurant about product not ambiance.
