Jay Nok Kraton Song Krueng ( ) - Jay Nok serves some of the best mixed santol fruit in Thailand, and additionally, her green mango with sweet and fish sauce and shrimp is outstanding. As soon as you arrive, you can tell she is truly a queen of fruit. The santol and mangoes that she uses are of the top quality, hard to find, the size, juiciness, and quality that she uses. Shes a master. In order to make mixed santol, she spends 8 hours slowing mixed the syrup so it turns to the right consistency. The santol is peeled and soaked in salt water for 4 hours. When you order, the santol is sliced, topped with the sweet syrup, then peanuts, shredded coconut, and shrimp, and then topped with more syrup. Its quite an extreme mixture of different and diverse flavors in your mouth at the same time, with the juiciness of the santol fruit. 15: 27 I so wanted to put that cloud like sweet n sour delicious cottony seeds in my mouth and swallow it It's my fave fruit snacks besides guava, roasted Saba banana, Atis, Guyabano, mango, dalandan and more. My late father has this variety in his farm way back in th 80's we called this variety MALAMUKOT pertaining to the thick, cloudy, soft cottony seeds. But actually this huge variety it's called Bangkok santol, the local ones comes small but there were varieties that is very, very sweet including the flesh surrounding the seeds.

i have seen the santol fruit before when i was shopping at the Malaysian side of Padang Besar close to Songkhla. in Malay, the fruit is called as buah setoi where the Satun province in the south gets its name. many Malays usually prickle this fruit.

This episode, they way Mark describes the FRUITS, it is so wow, makes me hungry at almost 1 a. m. i mean it just fruits not meat I am a true meat lover but these fruits are super finger licking good.

I think the reason the santal is soaked in salt water is to prevent oxidation that cause the browning of the fruit meat. The santal the moment you peel the skin, the meat gets brown in a few seconds.

Indeed santol also here in Philippines use in some of dishes called Sinantol and the big one size of santol here we called Bangkok Like this if your Filipino and already tried that dish.
