It is not garam masala inside bati aka litti. It is a mixture prepared by mixing garlic, ginger, onion powdered roasted gram, lemon, mustard oil and green chilli. And it is not sauce, it is called bharta/ chokha. Different ways to make it. All those people freaking out over cleanliness, just chill. He is a small timer earning his bread in a small place. He is not versed in your great manners. May be those who are germophobe should eat in a 5 star. This place caters to people who are not fortunate enough

Mark, in my time, these, called LITTI, were roasted directly over cowdung patties. Very wonderful taste. Cows were fed only straw, leaves, twigs, therefore dungs was firm, rich in lignins, very low in the odoriferous compounds associated in loose dung of animals fed fishmeal and animal byproducts. This dung was like buffalo chips, burning sweet and hot. Littis are stuffed with parched chickpea flour mashed with water, mustard oil, green chili, occasionally sour pickles. Eaten with country ghee.

Bhatti. mounds of flour grilled over hot coal fire. it is a Rajasthani dish. from the peasantry. there is a sweet variation of it. it is eaten with dal usually. called Dhal Bhatti. it is easy to make. but one has to get the right consistency. it has to crumble when bitten into. not be hard: ): )

Here's the thing: The roti ball, looks like a simple tasty Indian snack, I would try. The hands crumpled around it, and given to the customer, didn't sit well with me. Hopefully, his hands, were sanitary.

The sauce is called as choka. made of potato and tomato heated for long with indian spices. The bati in Rajisthan and bati in varanasi is completely different in taste.

when first time i saw. i was very curious to eat this. but on eating. i had to leave it half eaten. may be my taste buds didnt like it or it was not cooked the way it shud be.
