Mark, you needed to ask for 'lat jiew yau' (chilli oil. Don't know what that orange abomination was. In HK, if no one serves you, just go nosing around until you either find someone or whatever you're looking for. You have to be proactive in HK. Ppl simply don't have the time. Table sharing is extremely common there also as real estate is the most expensive in the world. Those who can't handle with sharing should avoid eating out. Everything in HK is about speed, money and convenience so don't be surprised if ppl don't have time or patience for 'niceness'. HK society is under a lot of pressure. And. waiting in lines for 1-2 hours for a table is not unusual either. You either wait, or never get to eat there as most places are always, always busy no matter what time you go. If there are no queues then that's a red flag; the food is not up to standard.

Hi Mark. i always watching your video. I'm Ramon. from Montreal Canada. I wish i can travel all over the world like you. I'm a filipino. And i grew up in manila. since i was kid i love eating. my father always bringing us to chinatown in manila. we love to eat dim sum, my favorite is siomai, steam bun we called siopao. and roast pig ( lechon) i saw your video in chinatown manila. i miss so much that place. the best restaurant in chinatown manila. toho antigua and the president and Wah Sun. i wish one day you can visit Montreal so i can show my signature filipino dishes. i like b. b. q. pork. kikiam (ground pork with ingredients. and rolled in bean curd wrapper and fry it ) fresh lumpia (fresh egg roll. and good luck to your travel

That first rice is Lotus Leaf Rice Hor Yip Fan there should be half Chinese mushroom, a few slices of Chinese sausage with pork or chicken and dried shrimp(the improved version will be dried scallops and salted egg yolk. It is like a fragrance bomb once you open the pack the different smell will hit your nose in an instant. Whereas traditionally gluttonous rice with chicken aka Lor Mai Kai is not wrapped in the lotus leaves but a small rice bowl(ceramic) the size of a fist consist of only chicken and a thin slice(or two) of Chinese mushroom. Many a time restaurants screw up both of them in dim sum. Or mix them together confusing people these days. Hor Yip Fan will never be lesser than Loh Mai Kai.

I love the history of the building and the view after you hiked as well as looking at the food. We are poor, and have not had electricity for a couple of years, and I love watch your videos as it helps to plant ideas in my brain for things I might like to try and cook, better spices, and even healthier eating as I am overweight. Often I am eating spicy flavored ramen with an over easy egg in it watching your videos as it is something I enjoy. I love seeing your wife laughing in some of the videos, and your son is so cute. What a great experience for him to get to travel the world like that. Thank you for sharing your travels with us.

Mark, there is another way to get to the Peak. Bus 15C from Central Pier, Bus 15 from Exchange Sq, or Minibus 1 from public transport area of the MTR Hong Kong Station. These are all better than the Tram after 5PM, because the of crowds and long lines. Less expensive as well. Using the buses is easy. Each bus company, as well as the MTR, have apps, in english, that will help you find a route. All buses take the Octopus card, so you don't need change. For your followers, Mark has an Octopus card in the video. Any place you need to go in HK, you can use public transport. Easiest city in Asia for english speakers.

Mark - Those Hong Kong brats are mean. No wonder Ying hid in the hotel room. Everything is a fight in that giant ant hill of fighting fire ants. Fight to get Dim Sum. Fight to get to the top of Victoria Peak. Wow what a battle. Normally Dim Sum is wonderful & calm & the ladyrolls each table with the cart & you can take your time picking & choosing. The best dish seemed to be that eggplant fritter you were surprised to get at dinner.

I've had a lot of dim sum in my life, from New York to California, most of the time you don't have to fight for the food. Sometimes during the busiest hour, you do have to make special requests to the waiters and they watch for the kitchen to get you want you really want, like don tot (egg custard dessert) or beef fun roll, my favorites

Mark, if you love lo mai kai, then you should try our ma-chang here in manila. Its also glutinous rice cooked in braising liquid. It has chicken, chestnuts, pork, dried shrimp, huge shitake mushroom and yellow beans. all that goodness wrapped in bamboo leaf. Great with hotsauce and a bowl of clear soup

When I used to travel a lot and had Jet Lag. I used to sit on the edge of the bed and on the carpet barefooted, I would make tiny fists with my toes. It works and just keep your eyes closed and feel the lag leave and make you feel better. You wont know. Till you Give it a try.
