Khao Soi ) is a northern Thai, noodles and curry dish. Read more about it here: Khao soi ) is easily one of the most famous dishes from the north of Thailand. For me, its a dish that can either be really good or really bad. Sometimes its really bad because the ingredients are not fresh, and because the curry is way too sweet and way too oily. But every now and then, when Im in northern Thailand, I have a bowl of khao soi ) that absolutely blows my mind and at Khao Soi Islam ( ) truly served me one of the best bowls of the dish that Ive ever had in my life. Khao Soi Islam, not to be confused with a restaurant by the same name in Chiang Mai, is located right in the heart of the old part of Lampang. The restaurant is owned and operated by a family, who has been serving and cooking khao soi for generations. The restaurant, as the name suggests, serves strictly Halal food. As soon as I arrived, I could smell the curry, and the owner and his family were all extremely friendly and greeted us as we arrived. One of the first things I noticed was a pan full of freshly made egg noodles sitting on the counter, and that was my first sign that it was going to be epic. For my first bowl of noodles, I ordered khao soi neua, curry noodles with beef. The noodle master, the owner of the restaurant, expertly blanched the fresh egg noodles, then divided them into bowls, and then covered them in his blend of curry sauce along with nuggets of beef. He then topped each bowl with a handful of crispy fried egg noodles, the typical topping of any bowl of khao soi. Before adding any chili, I first, tasted the curry sauce. To my extreme delight, the curry sauce was not sweet at all - in fact I dont think there was any sugar at all involved in his recipe. The curry was rich and creamy, nicely flavored with curry powder. Equally as delicious were the egg noodles, which tasted extremely fresh, slightly chewy and soft at the same time. The combination was so incredibly good I could hardly contain my delight. But after sampling my khao soi, I then added in a couple scoops of chili sauce, which gave my bowl of noodles a lovely smoky roasted chili flavor, and I tossed in the plate of condiments which included pickled mustard greens, sliced shallots, and a squeeze of lime juice. I have to say this was one of the finest bowls of khao soi ) Ive ever had in my life. We also tried the khanom pang na gai, little pieces of bread topped with chicken and shallow fried in oil. They were alright, but not really my thing, and they were no where in comparison to the deliciousness of the khao soi. I could not stop at one bowl, so after slurping down the first bowl I ordered khao soi gai, the chicken version. Again, it was mind-blowingly delicious, but overall I think the beef was better - just out of my love for beef. If you ever visit Lampang, Thailand (which is a wonderful city by the way, Khao Soi Islam ) is a restaurant youre not going to want to miss. This looks more like kaopoon than the khaosoy that I'm used to (although kaopoon is usually served with the rice noodles that is used in spring roll fillings. I've never seen khaosoy made with egg noodles either. The khaosoy I am used to contains wide rice noodles with minced pork in a fermented bean sauce and served with pho condiments. But hey, I live in CA so I'm pretty sure everything we eat here has been tailored to the American palate. I can't wait to eat Thai food in Thailand. Great video

Wow looking at the address i must be in that vicinity several times without knowing about the shop. Must do next time. PS. recently there's a movement to not mix union and prickled cabbage into the Khoa Soi bowl. Just have them the way Koreans do with their side dishes. That's what believed to be the original way. Khao Soi is one of the dishes passed on by Burmese rulers back in time.

I made a version of this for dinner last night and it was so, so good. Those chilis fried in oil are delicious and Im not one for overly spicy food. The smoky nutty flavor they bring to the curried soupy noodles is so good. I have some left over and even the smell of them is making my mouth water. Time to make some more.

Hi MarkThere is nothing better than a bowl of noodles and meat and a delicious broth. Of course, with chili I could eat every day pasta. The variety of pasta dishes in Thailand, China and other Asian countries are endless. You could eat every day a different dish. I love all types of noodles.

Thai food is very flavoursome, but it's swimming in copious amounts of oil and can be prepared by clueless chefs who don't realise, that you have to de- husk garlic n chop sprigs off chillies ect, but yes it's definitely amongst the tastiest cuisine, when prepared correctly.

My parents make really good khaosoy. We don't usually eat it with egg noodles. we use rice noodles and use curry ground pork. Our broth is usually simple beef broth with some onions tossed in. It's really delicious I would love to try it from Thailand
