Perfect except for the lemon, I personally really dislike with with lemon, had it once and I really didn't like it. Meat with lemon is nice though, we germans do Schnitzel with a sprinkle of lemon sometimes and it's probably also dependent on where you are from in germany.

I love spices and chillies but, but fish is such a delicate taste that would be completely overpowered by the habanero, lime, vinegar and cilantro. to my humble and personal opinion

Everytime he says Escovitch I think of Azkaban because the pronounciations are basically the same, one with ban at the end and the other with vitch.
