Chile is thought to have first developed because the corn diet ancient Americans ate was boring, hard to digest/eat/chew and was generally horrible. Chile-s broke up that monotony and allowed people to enjoy the other disgusting crap they ate. And of course a numb tongue can help mask shit food. --This was at least 3-5k ya I think the food being relatively bad was because we were still -modifying- it into its current form. Imo Chile was the first mass produced crop that was bred for taste rather than caloric value.

What I don't think most non-new mexican's watching this understand is that the lady wasn't exaggerating. We literally eat chili EVERYDAY, sometimes every meal. Burrito for breakfast? Chile. Burger or pizza for lunch? Chile. Smothered cheese fires? Chile! Dinner? Enchiladas or any other Mexican dish = chile! Making pasta? chili in the sauce. Green chile chicken alfredo? Delicious!

Demming has the hottest, most intense chile I've ever had. I'm not a local, but my best friend is (Sandia Park, ABQ. I love New Mexican Chile. One of my favorite foods of all time. I remember getting a cheeseburger at Blake's and the spice sending me into a euphoric coma. That, and the Frontier burrito (the sweet roll is also a must.

I'm also addicted to chillies, got two plants in the backyard, never ending supply of bird's eye chillies. I sometimes add them fresh or put them in the oven for 30 mins on low heat, to get that roasted/char flavour. Then i put them in a grinder and grind them to whatever meat/rice i eat.

You can-t say New Mexico without Mexico. All this -Authentic- food IS Mexican. I live in New Mexico and I guarantee all you-re Gramas Gramas Where Mexican! Good food but the origin is from Mexico even used to belong to Mexico back then. Y-all welcome

I dont think people understand how special hatch chile is. At first I tried to spread the word but I've since shut my mouth. I don't want too many people to figure it out and ruin a good thing.
