The vague origins of 'mac and cheese' was 'welsh rarebit', a dish made from cooking cheese with beer and seasoning it with mustard, served often over toast. The mustard really makes it. And next time you do a grilled cheese, spread a bit of dijon on the inside before adding the cheese and cooking it.

Its not even mac and cheese anymore. Might be good, but its not mac and cheese. Like calling a grilled sandwich that has some cheese but loads of other ingredients a grilled cheese. It becomes a panini or melt of some sort. This is just trashy pesto pasta.

The difference between BA comments and these comments is staggering. And I actually did watch for the idea. As a Canadian wanting a good pure KD, I don't know if I would try this, but the Pesto variation is an interesting one.

Made this at home for dinner with the wifey. Just an experiment to do try while on corona virus lock down. - We both like Pasta, we both like Pesto, shes a cheese girl. Not bad i gotta say.

I just saw a recipe online for a baked potato stuffed with mac and cheese. I bet this pesto mac and cheese would work really well too and it would be a good and easy vegetarian meal.
