Michelle Minori, finalist from Top Chef Season 16, shares the multiple benefits of cast iron cookware, which makes her life in a kitchen a whole lot easier. Michelle demonstrates the ease with which both meats and vegetables can sear in cast iron pans, which can also go straight into the oven for braised dishes. Additionally, she proves how cast iron works as an ideal non-stick surface for cooking sticky, tricky fish fillets and how cast iron s ability to retain heat is its ultimate benefit

A cast iron skillet is all that is necessary but the Teflon is fun sometimes. i still have 4 of my moms original cast iron frm 30 yrs ago. They were like her babies in the kitchen. She clean, oil thm kept them lookn brand new. No rust or crust. now my daughters both want 1 for their hm.
They have special meaning being they belong to their grandmother RIH. I haven't price 1 lately but I think they're expensive these days right?

Hey Michelle wanted to ask you what if your cast iron looks like brown all around like if it s rustic which I clean up with a little soap and water then I dry it then I add my oil and with a paper towel I clean it with the oil and a lot of Residue still comes off everytime is that normal

Yeah if I could only have one cooking vessel for the rest of time it would have to be a Dutch oven!
The salt method for cleaning works, but if you would rather not waste salt just clean it while the pan is still hot with hot water, everything should come right off pretty easy!

So, sear at way too high heat, burn the outside of the meat, have to clean out and completely waste the fond, (because you've burned it) and start again with veggies. Be sure to burn them too, burnt flavors are best flavors! What a disaster

I have iron clad, carbon steel, nonstick, ceramic, and some other pans. My 12 dollar cast iron out performs them all. I use my non stick for eggs, or fish.
