Farideh is making Beef Wellington, a savory beef tenderloin wrapped in puff pastry with layers of prosciutto, dijon mustard, and a mushroom paste. This show-stopping recipe comes together surprisingly easily, with the help from store-bought puff pastry. Farideh sears the beef tenderloin before coating it in dijon mustard, then wraps it in layers of prosciutto, a layer of duxelle, a preparation of sauteed mushrooms with shallots and garlic, and the pastry dough. She bakes it in the oven and the result is a golden flaky crust with a tender roast beef center

That beef is almost raw, come on Munchies that cannot be not healthy at all. It shouldn't be pink or have blood on it, that doesn't mean burn it to a crisp, but it should be red or pink when you cook red meat.

That duxelles needs to be dry. Completely dry. Solid twenty minutes on the stove. The juices running out at the end are the result of not making it properly.

Gordon said if you wrapped it tightly its sets up more uniform in shape, idk if you even care at all but I wrap mine very tight

I bet my butcher 1, 000 that he couldn't reach the beef on the top shelf without a ladder.
He said the steaks were too high.
