I grill one side of bread slices with butter first, then assemble the sandwich with the grilled side facing the inside (next to the cheese) then grill the the outside of the assembled sandwich. The bread comes out extra crunchy since you've doubled the grilled surface area and the residual heat allows the cheese to melt faster so you can use a higher heat without burning the bread.

Almost as good as the one I had years ago in Canada. Sourdough, garlic butter, extra sharp white cheddar, gouda, and a 3rd cheese that escapes me (either havarti, gruyere or muenster, and a pound of Montreal smoked meat. Insanely good.

I had left over brisket, so tonight for dinner I caramelized an onion, cut up the brisket, added provolone, toasted a hoagie roll and had an easy philly steak sandwich
