Castor Sugar works wonderfully in caramel. I ve found that a tablespoon of butter works well with a smaller amount of cream. Also, throw a lemon wedge in there when agitating you re sugars to act as a natural spoon so that you don t get re-crystallization

Hey Sam, oh Sam! Just recently discovered you due to excessive home time recovering from shoulder surgery (Two thumbs down. I don't recommend AT ALL, but a fitting way to end whatever you want to call this past year.
You have provided me with hours of entertainment during this trying time of healing. I really can't thank you enough.
Because I have been watching a lot of your videos, back to back to back, I wanted to address a repeated topic:

Hey It's Mike from CT. It looked like you were having trouble finding which way to grain goes on the ribeye. and for good reason! Since ribeye steaks are cut from the whole rib (as you might expect, they are already cut against the grain! If you wanted shorter fibers, you could get thinner steaks, but it doesn't make a big difference because the fibers tend to be on the thinner side in those kinds of pricier cuts. Just a fun fact for ya.

Sam is a Kroger shopper lol. How do I know? I work in the meat and seafood department at my local store and I recognize the party wings, the packaging and price label for the steak, and even the buns because the bakery is right next to my department and yes, those buns are awesome

those slides, God I wish I could make those, but my nobody in my family would eat them, they either hate onions, peppers, mushrooms 2 out of the 3 or all 3, and I can't eat onions though I love them. but man o man I think I can modify and get yumminess

Sorry, I forgot to add that your show wouldn't be the show it is without Max behind the camera. You're cooking is great but Max manages to capture all the magic. I don't think he gets as much credit as he deserves.

Watching Sam attempt to put the wings into the bag felt just like an infomercial. I half expected him to pimp some kind of patented chicken wing funnel after his massive frustration fail shot.
