Peanut Butter + Dill Pickle really works for the same reason why hot sauce on smoked brisket or barbecue ribs works. When you combine the roasted, smoky flavor of peanut butter with the crisp sourness of the pickle, you're really sort of creating an on-the-fly barbecue sauce. That's the reason it kind of works as a snack, but it feels like it's missing something. What I do with this particular combo is blend them into a peanut relish of sorts, then put it on top of a fatty fish (I like mackerel for this) with some fresh green onions and chili flakes on white rice. Another similar thing I do involves replacing the peanut butter with tahini, and just dipping sweet potato fries in the tahini pickle mix. you can add just a hint of orange blossom honey and a pinch of cloves to really make it all pop (or clover honey and a pinch of good cinnamon [real zeylanicum/verum, not cassia].

Banana, like sweet plantain, goes great with boldly flavored savory food already and is often eaten together in other countries. I'd imagine if anything would the blend pesto and banana even closer would be the pine nuts, a sub out from peanut butter and banana, which explains why it comes off so creamy to you guys.
Also Filipinos enjoy green/sour mangoes with their shrimp/fish paste. The saltiness in the paste helps combat the sour and mango its self helps mellow out the fishiness of the paste and compliments its funk leaning towards a way not unlike that of sauerkraut.

Video i would Like to see! Word has it you can place a slice of cucumber in a 5 gallon bucket of slop food waste dump it in a trough to the pigs and that piece of cucumber will still yet be there when the feeding frenzy is over & done with due to their three hour digestion pigs will not eat a cucumber because it extracts nutrients out of your bowel line while you try to digest your food

I make Mango Sambal all the time, its mangoes and shrimp paste sometimes i use fermented krills as well, mix them together with slices of shallots, chilies, and a dash of lime. Delish!
Another snack that i love to eat is unripened mangoes sliced then dipped into a soy sauce, shrimp paste, sugar and chili sauce dip. Truly Yummers!

I'm allergic to fresh pineapple too, and kiwi. But I can eat canned pineapple. You might be able to get your pineapple fix if you just stick to the canned. I suspect it's an enzyme (protein) that gets denatured during the harsh canning process. I would be careful with very ripe mango too though.

I feel like id enjoy peanut butter and pickle if i could stomach pickles. Cuz like. i ADORE peanut butter, but cant do pickles at all. And sadly, the peanut butter doesn't make the pickle palatable enough for me to like.

In philippines it is actually a thing to dip green mangoes into bagoong (which is fermented shrimp paste. But not the ripe mango. It pairs perfectly with green mango, but not a ripe yellow mango.

Super late to the party, but the peanut butter and pickle combo, you've got to put that on a sandwich. My family has been eating them for decades! Use sliced sandwich pickes!
