Two chefs, one French cookbook from 1914. It's the ultimate bible to classic French cooking, so how are they going to get on? Leonard: Turning potatos, court-bouillon, veloute, roux, nap over the fish. Got some heavy flashbacks from this and they still teaching it like that in cooking schools (at least in Germany.

Itd be cool to see them cooking Royal court dishes from famous monarchs like Louis XIV, Henry VIII, Boudicca, Elizabeth I, Alexander the Great, Cleopatra and Ieyasu Tokugawa etc.

Somehow i have a feeling that they were both classically trained but James worked in a fine dinning restaurant and Ben worked in an american dinner for the last 10 years.

I can imagine James being head chef in a restaurant and being politely rude to his staff. Theyve been in there fckng ages in a really calm voice

With the 1914 book, some looks back at history and how they were thinking about food and how these were originally done would add a lot.

When I trained as a chef in 1976 (yikes) the Repertoire and Practical Cookery by Ceserani and Kinton were the only two books we used!

Im convinced they dont really have a time limit for each other, they just count down near the end to add suspense for the audience

Ben is so nice but James just shuts down most of his suggestions and does whatever he feels like. Ben, we're using this plate!
