I have a cooking challenge. I am on a medical restriction diet and about to head off to uni but I find the only foods I can eat are those I make myself. I have a no/extremely low-fat diet followed by the exemption of vinegars, fermented foods, pickled items, soy sauce, and any product containing alcohol/ethanol.
My diet as of late had been some soups, rice, white fish or crab (when available) and a salad purely dressed with lemon juice. I cant have avocado, cheese, nuts and I am pretty much am hanging on with my ability to make a good Pico de gallo for some sort of flavor in anything. Please can anyone give me suggestions to a flavorful meal within my medical dietary restrictions.

Good inspiration from all three dishes. Usually I don't agree with at least one of them, this time they all have something going. I just might make a lentil one with the harrisa and yogurt. I'll have to experiment a little. Lentils are so underrated in our culture. Normally you only see them with fatty pork in some form - very much unlike dal in India which is delicious and all lentils.

mike's salad looks so good the tastiest and absolutely worth the effort, and i'd love to make it right now but all i just got from the shops was some dummy peach ice lollies lol. i really need to start watching these videos beforeeeeeee i get some food ai

Made Ben's Harrisa seasoned chicken salad. Swapped the quinoa with couscous (didn't have any quinoa. It was delicious. It is a salad that would keep very well. I want to try the other ones too and probably mix and match bits from the three recipes.

Please do more salads. Maybe with different proteins, grains, veggies possibly even fruits/berries in some of them. And put a lot of focus on the dressings, as that it often where it gets boring for me.

Anyone else think that the name was misleading? I thought they were making chicken salad that would go in a chicken salad sandwich. Not full fledged salads with added chicken.

I need to eat more leafy greens, and salads are often boring. I'm inspired now to make more salads. I learned some things from all three of your salads. Thanks!
