Making 500 Pounds Of Stretchy Ice Cream A Day Stijn Cornelis: I wonder where they get the Sahlab-powder from? Its mind boggling they use flour from the roots of endangered orchid species. The flour or powder is traditionally made from orchid tubers growing in the wild. Problem is, the orchids are harvested in the wild and once you take out the tuber of the orchid, it never grows back. The past decade the orchids became rarities and in some regions even completely dissapeared. Exporting Sahlab (or Salep) out of Turkey (the biggest producer) is now illegal in order to slow down the harvesting and the extinction of the orchid species. Most Sahlab used commercialy is now harvested in Iran. But Iran is now facing the same ecological timebomb as Turkey.

The Arabs stole many things from Ottomans like Shish Taouk the name himself is Turkish. Taouk is from Old Turkish Takagu. Booza is from Turkish (Buzu) and in Old Turkish it was Bn. Its uncommon for Arabs use Turkish words. Thats only can happen if you stole something from other people. This Ice is not East Asian origin like Turkic people but native to Anatolian people todays Modern Turkish people. Basicly Anatolian Ice stolen from Arabs The Turkish version of it looks better and they sell it in Waffles in Turkey or in Sandwich. I was many times in turkey and its so tasty. It makes me mad how Arabs stole it.

Mastic comes from my father island in Greece called Chios. Its the only place in the world that produces mastic. Also it only grows on the south side of the island.

it is very nostalgic to see the old style booza now becoming mainstream. my favorite will always be pistachio and mastic. its traditional syrian/ lebanese icecream

Booza is just the arabic translation for ice cream, BUT this looks exactly like the original in Syria that I tried, really awesome that it came to the states.

sahlab is actually a drink that egyptians drink during the winter it tastes amazing ana mastika is used in most egyptian homes for making food

I went there. Not to be rude, this is my honest opinion, it was really annoying to eat and overpriced for the tiny amount they give you.

I could work here just watching how stretchy the booza is makes it so relaxing and hypnotic lol Id pay whatever price for a scoop
