Oh my gosh yesssss. I used to get a steak with blue cheese walnut butter on top of my steak medium rare and the pairing is without a doubt thee most delicious thing you will ever ever eat. so delicious. and the melted blue cheese butter mixed with steak drippings on my warm sourdough bread. it will make your eyes roll in the back of your head so dekicious. it's a wonder I'm not big as a house because I could eat non stop if only my stomach were big. this dish you featured here well done well done this is the most delicious plate ever

Dont stab your steaks with a probe and don't call it a compound butter (catering college 101) they steal the soul from cooking.
