I caught several mangrove snappers last week and gave t hem to my Jamaican neighbor lady to cook. She scaled the fish and then cut the head and fins off. gutted the fish also. Then she coated the fish with some type of seasoning and deep fat fried it for a couple of minutes. The skin was crisp and the meat was soft and succulent. It wasn't oily or greasy from the frying process. It was delicious and the skin had the texture of a potato chip. I would appreciate if you would show some alternative ways to prepare and cook mangrove(grey snappers.
I live in Cape Coral across the state from you. I moved from the Pompano Beach area two years ago and the fishing over here for snook and redfish is pretty good. Trout, blue fish, cobia, snook, and redfish are biting now inshore. I have a small 18 foot outboard so I don't go out in the Gulf very far but they say that's where the big red snappers and grouper are. We're talking about going out 20 to 50 miles out in the Gulf.
If you ever get over this way you might find it fun to fish the Gulf and inshore waters.

Being from PA I've ate a lot of Bass, smallies, largemouth, rockbass along with Cats (my main target, Walleye, Striper, and many of the other northern fish except Pike and Musky. The Red eye is my favorite. Trout, I don't care for any part of that family, when I was young I probably ate more Salmon than an Eskimo does in their life time.
I love Flounder but never did any saltwater fishing. yet. Was just to Oak Island, NC but locals said there wasn't much around at that time so I passed up on fishing and just got some rod/reel setups to use later when I go back down in June, July, and probably Aug.
I'll be moving soon somewhere south, NC to FL, hoping on FL as I'm getting tired of the northern winters and want as far away from the four letter white crap. Just haven't decided for sure if I want to live off a boat or travel around in a motorhome. It was nice strolling the surf in shorts and a T in Feb 50 weather. lol

Cleaning and managing our freshwater canals needs to be top priority in Florida. I caught 30 to 40 inch snook on topwater lures in our canals all summer long. There should be fish ladders at all dams for snook, tarpon, sea trout, reds, jack, and mullet. Stop spraying herbicides and ban chemicals.
I am tired of this red tide disaster.
All canals flow right out to sea. It is time to take care of our water.

Sadly, inland waters suffer from petro driven transportation & the resultant runoff. Along, with myriad other pollution from industrial water use.
Perhaps, when we get into 20 years of E-vehicle use nationally, then our rivers and streams may begin to improve.
That said 2 or 3 meals a year will probably safe. So keep catching!

In Singapore we only have peacock basses here so if you wanna catch peacock basses come to Singapore. But some spots are illegal to fish in but YOLO lol. Im about to try a peacock bass today.

2nd time I've seen you found a bone Brian but that's the challenge in eating a fish. Yes Darcy great to see you catch and cook and its a bit of hard work but that's the best part of fishing.

Some things we do here in Indiana is put are fish in a horse troff or water tank run fresh water threw them for a day or so. It helps clean them out especially big catfish.
