I used to cook whole 15 lb rockfish in California. We used to stuff with a seafood stuffing of fresh shrimp and cleaned clams. With vegetables and lemon. It's a Mexican dish and is delicias del mar. My best friend from childhood Art Quesada called at my dads boat every week. Between Senorita Quesada's restaurant and Mr Chien's we had most all our fresh fish sold. Very little commercial dock for us. Although commercial fishing was often more than they could handle, we set aside the best for them. If we had a fresh octopus Mr Chien always out bid the Quesadas. Fresh octopus is delicious and if braised right not too chewy at all. Fresh is the key word. I love fresh octopus and used to get it in Southern Florida all the time. Bet Brian likes it too.

Happy new year, y'all! Glad to see you're back at it in full force! I'm not a fan of whole fish, although it's a really traditional thing around here (eastern NC. It looks great, but bones just freak me out. I blame my grandma. Looking forward to following you two through 2020.

Hello Darcie and Brian
Brian, to avoid putting flour everywhere, I put the flour in a big freezer bag then fish or fillet then I close the bag and I shake vigorously. You can try, its very effective.

Darcizzle nice job fish cleaning segment I would suggest removing the fins first then scaling then scaling it. Because the fish body will remain firm the scaling process is easier then move on to the gutting process. Pudding keep upping your cooking game NICE job

tip on scaling a fish, press down on the head an make diagonal pulls across the fish from the tail upwards to the head and repeat on the other side also scale small fish in a sink or cooler filled with water so the scales don't go everywhere. keep on fishing!

Good video! . I know you fried those snappers up whole, but I've never heard you mention snapper throats. there's a nice piece of meat at the throats of all snapper, try it sometime!

Tip > Scale fish before cleaning a lot easier. Ditch the white flour and go with ( corn flour. I think you could sell the hell out of your chefs hat, cooking with Puddin. Happy New Year.
