The first time I ate amberjack I was a little reluctant knowing that some of them are full of worms. Some, not so bad. The one I cut to eat with my diving buddies was full of them. Gross! Well, it was so good. I ate three pieces. I can't find the worms after it's cooked. They must melt or something. I can't find them. And yes Darci, they are great smoked. Get one and smoke it up. The next time you grill one. Get ya a recipe for a good ginger marinade. You two will love it. That was a healthy looking dish Puddin whiped up. I'm hungry now. Keep it rolling and keep on fishing. And Puddin, you keep on cooking. Catchem up.

AJ steaks on the grill brushed with melted butter and blackened seasoning after marinating in zesty Italian dressing in the fridge for 20 minutes. One of the best fish eating experiences there is. I like it about the same as blackened Tuna steaks, maybe even a little better. Portabella mushrooms and zucchini grilled with it. mmmm good stuff.

I also like to eat Amberjack, most parasites Are located mostly in the tail and can be easily cut out. I've caught AJ's before that had SO many worms in it's tail that it makes you wonder how they can have so much strength and endurance (when I say a lot of worms, I mean in the lower half of the tail there's Nothing but worms.

It's been said by some marine-bio people that the worms in big fish are a good sign for the fish eco system. Shows that the fishes eco system is healthy. With removal and proper cooking temps it's nothing to worry about for humans.

They get worms in summertime. Winter is not as bad. The worms enter the fish when they go from the gulf to the Atlantic. The worms feed on other parasites that live in the fish that we cant see. Have a nice day.

Soak em in cold water with a cap of vinegar and salt and the worms will come out. The crappie we catch in the rivers here in Alabama have em and we soak em for 24 hours and the worms will all come out.

That is so weird to me. Amberjack is one of my all-time favorite eating fish. Now I am known for eating some weird fish, but I love these guys. That having been said I despise those worms!
