Two different cooked crab methods. A dressed crab and a really simple, but really tasty crab pasta dish David: OK, sorry this might be a long one. You are all fantastic. I have fished pofessionally in a small boat for years. A good few in Suffolk, trawling mainly for Dover Soles and lining for cod in winter. I can not tell you how I admire your respect for what the sea provides. As a suffolker I love crab, prawns and lobster, now I live in Devon.
TWO SUGGESTIONS. Female crabs are delicious in Marcn. So much coral. Don't get fussy about dressing them, but you do it beautifully. Mix the brown an white meat together in a bowl. Plent of good gound black pepper. A good 2 or more tablespoons of Hellmans NOT 'light'' mayo. Mix, serve on hot buttered toast. A little lemon juice if needed After you have boiled the crabs, they freeze well for 6 months. A good idea if you get them at their prime.
HOME MADE MAYO. Such a simple recipe. Get out an old-fashioned electric whisk with two whisks. Into a bowl, crack 2 or more egg yolks. Ther must be no white in the bowl - not even some of the thicker bits that hang on to the yolk as you transfer each on from each half eggshell to the other. OK? Now to the 2+ egg yolks add a pinch or two of salt, quite a bit of ground black pepper, 3/4 of a tea spoon of caster sugar, a good dollop of either English or Dijon mustard. And a good tablespoon of good Balsamic vinegar and a good tbsp of brown malt vineger.
Experimentation will let you know how many egg yolks, how much sugar ( I like more than most) and how much of each vinegar. Taste it at the end and decide how to vary it,
Right, but before you turn thew whizzer on, put a teaspoon with the handle on the edge of a plate, or a knife handle so that you can 3/4 fill the spoon with Good Extra virgin Olive oil.
If you like this and get used to it, so far this will have taken max 3 minutes
Now, turn the whizzer on. When all mixed (20 secs) start to add the oil from the spoon so, so slowly. Half a drop at t time. wait 10 secs, another half drop. This bit is so, so important. Then a drop, then 3, whisking all the time. Evebtually the rest of the spoonfull. It should have started to thicken. Then a little glugg of the olive oil, a glug of rapeseed oil. You will get the knack.
So easy, You can add garlic or chives or whatever. It is really perfect with ANY fish and hot boiled new potatoes
Ask for more if you like

My suggestion is Crab Jeon. Be careful Koreans like spicy foods, be cautious with amount of pepper you add; )
My 2nd suggestion is Tobago Curry Crab. I'd crack the shells when preparing the crab with a nutcracker so the sauce can get into the meat. Edible crabs there aren't soft shelled enough like Blue Crabs in Tobago for the sauce to penetrate.
Those little fondue forks are good for getting crab meat out: D
Needle-nose pliers would be good at breaking up the shell for a serving bowl also.

Hannah that was just fantastic. Well done to John for sourcing the crabs but showing the -dark art- of dressing a crab was simply brilliant. My parents were both from the East End of London and a pickled egg with seafood was the norm as it just goes perfectly. I have had dressed crab in Cromer but your version just nails it. (btw roll the chilli on the board first to loosen the seeds like that Gordon shouty bloke does; ) Fab vlog. Thanks for sharing!

Both crabs are 'nicely chilled out' lol. they are just relaxing waiting for a nice bath. don't really care for the taste of crab but I have nothing against those who do and they method of fishing for them amazes me. especially when you find videos of people who are over fishing or taking small ones. people go ape shit! and rightly so. as a conservationist i'm sure John would agree!

Hi John,
Seafood Spaghetti is always a top drawer meal. I start a new job on Monday after 3 months of no money, and after messaging you a few weeks ago when things were very different to now, you were very kind to me and i will Always remember that. I hope you are all well and work comes your way too. A Genuine Wish of good things ahead for your family, from Stevie in Fife.

That looked smashin Hannagh. I was a chef for many years and love your cooking videos.
Your right about the brown crab meat too, some people are a bit squeamish about it but I say -waste not want not- I've asked my wife to watch you cooking as she'll only eat fish out of boxes instead of letting me cook from fresh as she is s##t scared she'll find a bone. lol 10/10 -

Brilliant crab recipes and I agree that crab and egg is out of this world. but I must add that you should always add pasta to sauce NOT sauce to pasta. To give maximum flavour the pasta should be coated with ALL the sauce pan contents. By adding sauce to pasta you lose the lovely flavour that is contained within the remnants of the pan.

I remember back in the time when I was a child my dad used to teach me how to find my bite and that I have to respect the wildlife. In my country we say that the first 7 years of a child are very important and it looks like you guys have a good boy that you can be proud with. All the best for the family. I love every single video.

Yet another great video. I've been gone a while and haven't been able to watch any videos. So it was great to come back to this. So i'm super curious about the crab and egg mixture. Can you explain how that was made? Was it cooked through? Thank you all, for all hard work you put into these videos.
