Following on from my sea fishing session catching my first ever John Dory. We were treated to 2 different 5 star cookups from Spargo's Kitchen. Whole baked John Dory with hand picked aromatic herbs and white wine sauce, and John Dory fillets in an orange, cream and mushroom sauce. Perfect family cooking and an truly magical experience

Yes John Thanks for the Link Sir. I bake my whole Fish like that, works well with Turbot too. Back when I was young I was the Fish cook at the Connaught Hotel in MAYFAIR. your friend did a great job. top marks for the trimming of the dory very correct and old school not many would know how now I'm afraid. I hope you tasted the stock from the fish he had baked best part!

It's like cleaning a Lionfish here which has very poisonous spines.
Also looking at fish. Has the Chef ever tried a Salt crusted whole baked John Dory?
Awesome video again. Cheers mate.
From your friend on the other side of the pond.
P. S - Love that tip with the knife on checking to see if it was cooked thru.

To me. Jim is a really great home cook. There are plenty of housewives and home husbands up nooorth can do this though.
If I were paying I'd want a bit more creativity and precision, but frankly, this is more useable as a catch n cook resource than any I've seen, and I like the homely nature of his vibe.

When i used to say to my wife John got this, and got that, she never paid attention. And when spargo kitchen came along she asking me to show what he's cooking now. And this is brilliant! Because i got her to watch one episode of fishing and then she can watch one about cooking --.

Always love to be in Spargo's Kitchen! How did that name come about? If it isn't an existing brand, it would be so lovely if you sold some Spargo's Kitchen gear on your online shop! I'd love a hoodie or an apron. Even if I can't cook half as well it would provide good inspiration -

You asked for ideas. How about cooking up an Indonesian Steamboat? Very difficult to find a UK restaurant that serve one. The only one I-ve ever eaten was cooked by me at the table on a bottled gas camping stove. You can use all types of fish and seafood.

And I defo appreciate your humour, John, whilst others, it seems, most certainly do not! Awkward moment much? -I was pithing myself! - - - -

That food looked amazing! I am really intrigued by the combination of orange, mushroom, and fish! Orange would not have been on my radar as an ingredient, esp with mushroom, but now I'm curious.
