Awesome! Those are significantly larger than the ones that are available here at the market. just wow. We have this fish-dish (usually a lunch snack) in the Netherlands, called -Lekkerbekje-, basically the UK fried fish of -fish and chips-. Back in the days, cod (-Kabeljauw-, Gadus Morhua) was used for it, but because of over fishing the Cod became more and more expensive. Nowadays most of the fish mongers use Pollack or Haddock for it, both very underrated fish! (though probably needs a bit more seasoning.
Made an oven dish with it last week: with leek (white bits, onion, broccoli leftovers, peas and baby carrots, fish (in smaller pieces, slices of (pre-cooked, unskinned) potato's and bechamel sauce with home made fish stock, covered with a layer of grated cheese (basically a -gratin-. It was lovely! Only used basic seasoning, some lemon juice and freshly chopped parsley.

It would be interesting to see ya' oven-bake Pollack. wrapped in a couple strips of bacon.
Done in individual aluminum foil pouches; some red onion, sea-salt & a dash of cayenne pepper.
I'm sure you'd agree. NO LEMON.
Served with whole kernel, buttered corn. or if you prefer. peas. Of-course potatoes; as in this video. Certainly, your potatoes will keep James happy: -)

We have been looking to book somewhere in Cornwall for a couple of weeks in the middle of June, if all that is going on is calmed down and we can travel?
Thinking of trying to book somewhere below Bodmin (we want St Ive's really, but the prices are looking too dear for us) so looking for something central from Bodmin, down to Land's End so we can travel out and about all over the area rather than just staying in one place.
Can't wait to get down there. --- (These crossed fingers look like prawns to me-.

I always find Pollock too big and too many in West Cork. Especially as everyone wants mackarel first. I've just settled for poach in milk, and remove skin and bone while potatoes boil. Add some parsley or whatever and make a bunch of fish cakes and freeze some. Eat the mackarel for a couple of days, then the fish cakes with ideally a tarragon&cream sauce and a green such as Bok Choi. Always use at least 50% fish to potatoes mash. And a small drop of Nam Pla might be worth a try.

Wow that looked delicious does the Pollock taste similar to Cod, both dishes looked fab, cooking fish in foil pacells is a great way you can add all the thing you like and its all cooks in their own juices, and the fish allways tastes better when you have caught/cooked it yourself, 2 great videos Jon and well done to Mrs Jon! keep them coming.

Both of those dishes looked fantastic. Thanks to your videos I've just taken the plunge and got myself a trout fishing set-up. I'll be ready for the 15th of March season start up here in the Highlands. Remote Lochs and Lochins will be my training grounds. Less people to see me hook my own face. Then it's on to the mackerel! --

Absolutely brilliant video. I-ve caught & eaten lots of pollack. Delicious fish but always wondered how to liven it up without spoiling it. I will try both of these.
I remember my daughters being just like James, fussy eaters, now in there 20-s & eat like goats -

I believe I would prefer the pollack in the aluminum foil as well. Just curious. nice to see Hannah in the video. I was wondering. was that your daughter at the table, thinking it might be. Don't tell me she's -camera shy-? LOL Tell her she's SAFE! I'm 68 and to old to flirt anymore-! Take care you all.

Hi Hi do you watch andies fishing? ozzy guy does wild camping and catch clean cook etc, i want the boat he has, you aware opf anyone selling boats like that in the UK been watching all the usual second hand boat sales in the UK for a year never seen anything like it, cheers
