This makes me want to get out there offshore even more. This dip looks not only delicious, but very easy to make. Gosh, Ive got to get down to the gulf. I live in Louisiana. My brother lives in New Orleans. I really have NO excuse not to get out there and go for it!

I know this is super late, but I used this video to make a Spanish mackerel dip. It ended up being a very big hit at our party. I love watching both you and Brookes catch and cook. They are the best I have ever seen.

Did you dry off the fish before smoking it? Dont want to leave a bunch of wet on it. Your dip looked good, except it was more like a spread instead of a dip. Just sayen.
