In this catch clean and cook, I compiled some permit bridge fishing footage from the Florida keys. I show you how to fillet and clean the highly prized game fish known as a permit. Harvesting a Permit might piss people off, as its not generally common practice to kill game fish. However what we did was perfectly legal and within the FWC guidelines. Permit are a saltwater species, abundant in the Florida Keys that love to eat crabs! The permit was prepared pan seared and blackened on a cast iron skillet.

What's the point of catching fish unless you're going to eat them? So called sport fishermen who usually go after bill fish, bass, trout, etc. make me so mad because 1. the fish often die after being caught and 2. they have very little respect for the fish themselves and treat these living animals like trophies. The worst thing I ever saw that has turned be off bass fishing forever is a tournament in which they brought the fish in to be weighed. Up to 50% of fish die after being in live wells. The fisherman who won the competition proceeded to throw the live bass up in the air, no-doubt ripping their mouths in the process. It is disgusting how some sportsmen treat fish (and deer and other animals too) like non-living objects.

Anybody affected by Irma, My thoughts are with you. Brook and I, are fine, but many of our Fellow Floridians have suffered a lot of damage. Keep the Florida Keys in your thoughts, as it was heavily destructed. Also stay tuned, as I will be running some sort of campaign for an Irma Relief effort.

Nah, you should go around the ribs. It cooks better than any other part of the fish. Gut it first from the vent up, then don't waste meat filleting. It's more than worth it.
If the extra few minutes of knife work starts to get annoying, remember the fish gave it's life for your nourishment.

Creval Jack are really great fish to catch & cook. Almost taste like Amber Jack. They are prized here in TEXAS. I like them Tony Chacheres fish Fry cubed into 1 deep fried. And I like your Grandma, rarely eat any fish I catch. I usually give them away or catch & release Great video BTW.

See if I sound upset. Next time put cayenne pepper pumpkin pie spice and whatever else you like on the permission then put parmesan cheese and breadcrumbs on the top side of the permission and put it under the broiler until it begins to smoke.

solid catch and damn right if its a good eating fish and legal eat it up and enjoy but man sharpen that fillet knife for goodness sake lol all in good fun but yes sharpen lol

Im wondering if you know about how long youd cook on each side. Have you cooked them again since this video? I know you said you felt you dried these out a little bit.
