A buddy of mine used to make me throw them away every single time I would catch them and i would always catch them alot. One day i caught one and i ran out of bait, i fillet them but the meat was so good looking that it made me curious and I wanted to taste the fish. It was surprisingly very flavorful. Guys these things are hidden treasures try them once it will change your opinion about it.

There is an easier way. Your first cut is too dangerous, no wonder you need a stiff blade. Easiest is run your sharp blade right up the VENT for the initial cut to get you in. You can make the next cuts pushing the blade tip away from you. Then reverse filet that pork chop like a pro. During the depression in coastal NC, they used the skins for shingles on buildings and they lasted several years.

I was in the seafood business in the Fulton Fish Market NYC for 30 years. good job. Try trigger fish whole, just gut it and skin it, leave it whole, and then cook it. If you think the fillet tastes good, you have to try it cooking with the bone!

I think triple tail and African pompano harder to filet,
If u have a card cake recipe substitute this with the crab, saute in butter, then when cool flake up and add to the What ever cake mix you have mixed up

Not quite how you clean a trigger. Better to start from the bottom near the butt hole. Your knife will penetrate the skin much easier and then work towards the head. Learned from the best. Boss from Grand Cay.

heheheh throws the skin and probably the rest of the body into the canal. wonder what kind of monsters live there. and dont let your poodle play outside

I use a serrated knife for getting through that skin and a regular filet knife for the rest. That way you dont dull your filet knife on that tough skin.

Try cutting the skin all the way around the fillet then grab a corner of the skin and pull skin will come right off then fillet the meat off the fish.

You don't even need a knife to clean these fish. Break the head off with your hands and peel the skin off with your fingers. Easiest fish ever to clean.

Good video! I sometimes catch these and agree that the meat is good. Now I see a way to more easily clean/fillet them before cooking. Thanks!
