Whiting(sea mullet as we call them in NC), personally i like to leave the skin on. I will cook a bake potato. I cook the the fish on medium heat in olive oil. for spices i use Butter buds spice and Greek spices. I go flesh side down first then flip. when the fish starts to flake off the skin, I put the fish across the top of the potato, leaving the skin in the pan with enough of the oil for the potato. then I turn the heat up a notch and crisp up the skin. let the skin and giblets dry on a paper towel. I crumble the skin and giblets up and sprinkle as a finishing touch on top of the potato( kind of like bacon bits and tasty)

here where i live fresh water drun and buffalo have a bad rap. No one eats them. But if your pressure cook the buffalo it is like tuna fish, and the drum you have to cut into 3 fillets. I would suggest soaking the drum in buttermilk for 1 day before cooking they Do have a strong fisjy smell and taste unless you do that. The meat in both is very white.

Try steaming the thread fin whole Chinese style with ginger garlic black beans and black beans sauce and finish with hot peanut oil poured over the top of the fish one of the best ways to eat it

Do you catch a lot of moi treadfin in Florida, in Hawaii there very regulated from June to August it is off season to catch moi, if you come to Honolulu look me up and I will take you fishing

Do you guys catch a lot of croaker out there? I love croaker. Its a very common fish her in the Hampton Roads area of Virginia. I love them. They do look slightly different here though

Try using ground pecans in a breading or a coating, with fish or chicken, grind ur pecans to a course meal consitantcy! unique when u can't get almonds.

that looks more like a ground mullet than a Croaker, the little piece of skin on the lower mouth is what gives it away for me and the strypes
