I think fish makes people nicer. Because any island or culture near the ocean that has fish as a huge part of their diet and history has some of the nicest people you'll ever meet. The Nordic countries, Asian countries and some parts of Africa have the nicest people you'll ever meet and they all have 20-30%+ of their meat consumption taken up by fish each year. The most of the world. Theres got to be a coalition

you can bake its head just seasoned with seasalt wrapped in fil for a bout 2 hours and you will get best fish head fat/meat gelatin eyeball and gill edges fat etc. also the backbone ribs can be fried crisp like a rib, they taste great too, they sell for about 200 USD a head cooked in Japan. The collar as well( kama) is amazing grilled or fried

You gotta brine it and smoke some
You won't believe how good it is
If you can cold smoke so much better, but if not its still good can use for salad etc

I like to use a little bowl of sesame oil for dipping my fingers in while shaping sushi, it doesn't loosen the rice, and it adds a good flavor to your pieces.
