you can bake its head just seasoned with seasalt wrapped in fil for a bout 2 hours and you will get best fish head fat/meat gelatin eyeball and gill edges fat etc. also the backbone ribs can be fried crisp like a rib, they taste great too, they sell for about 200 USD a head cooked in Japan. The collar as well( kama) is amazing grilled or fried

You gotta brine it and smoke some
You won't believe how good it is
If you can cold smoke so much better, but if not its still good can use for salad etc
