From Polish perspective, we're squished between Germany (representing Western Europe) and Russia (eastern Europe) with Belarus and Ukraine not making much of a difference in this picture (though they're also eastern Europe. That's why we see ourselves as central Europe.
Yes, you could argue that Germany is central Europe too - but when Polish people talk about Western Europe (meaning rich countries, with high salaries, or when talking about EU politics) Germany is always included. Central Europe would be Poland, Czechia, Slovakia, Hungary. These countries have a somewhat similar economic situation, many cultural similarities, and politically often stay together.
Labeling Poland as Eastern Europe - basically puts Poland into the same bag as Russia, which is despised strongly, especially with how tense the relations are now, and have been historically. We like to see ourselves as the stalwart defenders who always fought against Russian incursions, or tried to free ourselves from Russian occupation. Labeling us as Eastern Europe is like saying we failed (which we often did, but it's still not a nice thing to say; ) )
For the record - while some Polish people may hate Russians in general, and vice versa, there's still a lot of Polish people who have Russian friends, and don't hate the nation as a whole. However, Russian government is almost universally hated by Polish people. (but hey, Polish government is too, at least by the majority)

UK here and I have been to Warsaw. I have never thought of Poland as eastern Europe. To my I'd call it Northern Europe and it feels like it there too. I'd not say Central Europe as that's a bit of an unknown to me.
