I would probably make them ahead of time and eat them the first day hiking, and not assemble them at the campsite. Or do what Bryan did in the Manistee episode and make little sushi tacos. Do you know how well pickled ginger might hold up on a hiking trip? I would prefer that to wasabi. And don't forget to bring those little soy sauce packets you get with chinese take out. Wild gourmet at it's finest!

You dont have a rice cooker? Idk if its cuz you dont eat a lot of it or if you just wanna do it the more challenging way.
I wanna add that sushi was originally created as a way to keep fresh fish edible longer. Idk if I'd call it backpacking food, but definitely travel food. This goes for both the se asia version and the japanese version that came from it.

If you do it ahead of time and bring ready sushi with you, how long would you say they last. if the weather wasent too hot or you could store them cold? I love sushi but I never thought of it for outdoor food. Great idea! Love the way you do videos! Thanks for sharing! /Ulrica
