Join me on an early winter van camping trip. Cooking up good food on the gas job and grill and firing up the diesel heater to keep warm during the cold weather. Pri: Hey mike! I saw someone using an app on their phone that projected a movie/video on to any surface. I imagine the roof in you van would work great! I like to read a bit i the evening but find camping it is hard to get good light onto my book and sometimes makes my eyes sore so a video would be awesome.

That's a pretty sweet Van setup, very clean and functional!
Also- Cilantro and Coriander are two different parts of the same plant, Cilantro is the leaves and stem parts, and Coriander is the dried seeds, they produce different flavors and are used relatively differently with cooking (and Coriander is also used in some Brewing and Distilling.
Not sure if you were using just the leaves/ Cilantro or were also using the seeds/ Coriander ground or whole in the sauce, but it looks tasty. You always cook some awesome looking grub mate!

Banana pancakes- 1-2 Bananas and 1-2 eggs - Mash the banana & mix together with the egg into a batter (doesn't have to be smooth) then fry in some coconut oil (making sure NOT to heat the coconut oil at a high temp as it burns quickly) add honey and lemon over top once cooked.

Packet of Alfredo and a tin of tuna makes tuna mornay. I add the tuna when the alfredos halfway cooked sprinkle little bit of cheese when done. Packet of Alfredo and add cooked chicken or steak once Alfredo is done. You have three different dishes. All very simple.

You'll love those K02s, Mike. I have K02s on my wife's Ram 1500 and had the BFG Trail Terrain T/As on my Trail Boss before I sold it. Both are great. The K02s have gotten me down to my lake in a foot of snow. Mind youz mine are 35s, but still.

nice additions to the van! DO REMEMBER to keep a kitchen knife in there! Opinel 8 is a good one, use it for my camp food prep. how about nipping a fish caughg by your dad and making fish tacos with it

Hi Mike. Just FYI, don't ever leave the night heater on all night. It's not toxic or anything but it is very dry - you'll wake up with a sore throat.

I prefer cast iron pans for cooking as once they have been well seasoned they become non stick so long as you don't turn the heat up high where it would burn the oil layer off the cast iron.

You have a fine one-person camper van setup. I still would rather keep up with your woodland camps. I would like to see a Christmas camp in the Pallet Wood Palace.

you could add to your camping gear a folding swiss army paring knife. the one i have works great and i have used it to cut red peppers plus a onion

tube croissant dough, precooked boneless chicken breast, deli sliced sandwich ha, pre-sliced swiss cheese. roll up bake till brown
