What about the American dragons? Like Kukulkan/Quetzacoatl from Mesoamerica and not only them but also the Mother Dragon Cipactl, a giant Cayman Goddess who is killed by the Brothers Quetzacoatl and Tezcatlipoca and her body is used to make all the earth landmass in something simillar to what Marduk did with Tiamat in Sumerian/Akkadian myth.
Theres also in north america among the Alongquian natives the myth of Mishipeshu, dragons with full scales and powerfull claws who inhabit lakes and rules among water, they are the natural enemies of the Thunderbirds, among the Mississipian culture they were named Piassa.
And finally theres the Moche Dragon myth, sadly cause the moches were long gone 8 centuries before the inca empire started all that last about their myths was in their rich iconography on pottery and murals inside temples and pyramids of the Moche civilization.
The moches had many Gods but their supreme God was Ai-Apaec, the decaptator who interestingly acts like the chief Hero God who kills the dragon as seem across middle east, north africa and mediterranean traditions. In the pottery theres full scenes when Ai-Apaec accompanied by his fellow friends, Morrop the iguana head God and the Moon dog had some journeys untill Ai-Apaec also named nicknamed as the -wrinkled face God- starts to fight with a giant 4 legged dragon in land and also the battles go forth in the sea where this dragon acquire- a strange shell armor and continues to battles with the God. Also Ai-Apaec possess a two headded dragon magical belt who helps him in his fight against the great dragons of land and sea.

My grand mother told me about her grand mother telling her about giant snakes that existed here in central Europe and were called Pozoi(in slovenia as -dragons-) that were 5-10 m long and ca 20-30 cm thick. They lived in deep forests. She made a comparision with a long and heavy bar which was used to line a hay, or to keep hay on the pile, as a weight. When i was a little child (like in late 1980s) i remember seeing lots of snakes in prehistoric forest of Alder trees, here near my village. This forest is called -Black forest-. My grand father used to own some land there where we used to log. And a giant snake (viper, like 2, 5 m long whizzed past me. Today there are no more snakes like that as there used to be. Even frogs are almost extinct. Thanks to Communists they created so called -hydromelioration of water- and many animals (especially frogs that were an important part of the food chain for snakes) disappeared, including giant snakes, which our ancestors called -dragons-. Sadly, people used to kill these giant snakes. Men from the village went and were guarding their homes and as soon these snakes appeared, they killed them. They did not respect life in the Middle ages and even less in Modern age too much neither. My grandparents used to -scare- me as a child, when i was not a -good boy- that a -pozoi- (dragon) will come from a darkness and take me away. - I've never understood this word. later i figured out that it meant -a dragon-.

I've never heard of that Chinese creation myth before. The creation myths I know is that the world was an egg with PanGu inside, and when he grew he split it apart into the sky and Earth. Then he dies and becomes mountains, rivers, and I think his eyes become the Sun and Moon. As for human creation, the goddess NuWa sculpted them out of mud.
