The oil did not need to go into the bun until you had made the little cup shape from the dough. Then the oil should have gone into the cup and the edges of the cup closed and pinched shut. This would have left you with a round bun with a pocket in the middle. The way you did it, the fat was verticle in the bun, not horizontal as it should be.

This is not a burger. It is maybe an older version of a pull pork sandwich or sloppy joe, but it's definitely not a burger. It absolutely must have a patty of ground meat that is cooked AFTER being ground and formed into a patty or it makes zero sense to call it a hamburger. Ancient Chinese Sloppy Joe would have been just as click-baity and not bait-and-switchy.

Can we get Sohla some help for foreign word pronunciation? Like a native speaker interpreter in the corner who gives the correct pronunciation? That way people can actually find the ingredients at stores or order this on travels. Otherwise, you get people asking for -Chinese pull pork sandwiches. -

Definitely using -hamburger- as clickbait. which it worked cuz here we all are watching it. Definitely more of pulled pork sandwich more than anything else.
And, no not a sloppy joe as those how have ground meat and not pulled or shredded meat

This is more akin to a pulled pork sandwich rather than a hamburger. The combination of spices seems to be a precursor of the Chinese 5 spice. This entire recipe is an ancient version of the modern day Chinese braised pork belly.

It would be very interesting to know which recipes Sohla actually goes back to make for her own enjoyment. She mentions at the end of some recipes that she would like to make them again, but I wonder if she actually does.

Recipes I see for braised pork belly cheat and try to get a little flavor and color out of brown sugar. My version of cheating: a little blackstrap molasses. Doesn-t provide as much color as I see here.

This honestly looks more like pulled pork on a bun than anything resembling a hamburger. Not that I'm complaining. Pulled pork is AMAZING.
