The sun wouldn't be able to extinguished by wateri don't think, it's a ball of flaming gas, anything that gets extinguished would immediately get relit, the best way to extinguish it I think no would be to take some mass greater than the sun and extinguish it like dumping dirt or sand on a fire

Its estimated that GJ 1214b is about 75% water, or about 6 Earth masses. Yes this is a lot of water, but any brightness changes on the sun would be minimal at best. The Sun -turning whitish blue and growing six times bigger- is flat out wrong.

What if we collect co 2 from earth and put a large fire hose and inject to the core of sun to reduce the heat or totally destroyed the sun with carbon dioxide it is possible because CO2 it's unlimted in earth so try this theory
