The Ottoman's still would have collapsed. It wasn't their loss at Vienna that killed them, it was the fact that Spanish and Portuguese figured out how to get around them to get trade goods from asia. The only reason the Ottomans got so powerful in the first place is that they controlled the spice trade. Everything coming from asia had to go through Anatolia.
Once Europeans started sailing around Africa, the Ottomans were toast. They tried to stop this by breaking out into the Atlantic but the battle of Leptano prevented that. Of anything it was Leptano that was the battle that would doom the Ottomans.

A bit of a better scenario for how they would win:
King Sobieski leads his armies towards a weak and collapsing Vienna. The city was soon to fall to Ottoman hands if the poles had not arrived. Instead of the poles being able to attack the ottomans, some 30, 000 crimean tatars led by the khan of Crimea intercept the relief army and defeat them. Historically this 30, 000 Tatar army for the turks had been mobilized, however while in Moldavia, the Khan of Crimea went screw it and left. If the army had come then it would have surely defeated the polish forces, for an Ottoman victory

Whatifalthist As a Turk I would say After Vienna Ottomans will definetly attack Rome. Because main target is not north Europe. It is south Europe AND This is Second Vienna war. When you talked about Vienna I assumed First Vienna War. After Vienna is captured If I know better, They will relocate people and groups in and out of Vienna. It could even be Second Capital before Venice or Rome was captured. Venice is very close proximity and has importance on sea and Trade so it is very possible they will become next target.

this is kinda wrong, like ofc the ottomans would have tried to spread muslim and take everything they would have done it much longer but they didnt read sun tzi's art of war, they would have been emperor of europe and africa by 1600 and of the world by 1800 if they would had that book, and spies,
edit: also pax ottomana would maybe been better then todays west but who knows.

That doesn't make any sense in terms of sending troops out from Constantinople. The ottomans sent janissaries who raided with the Crimean tartars as far Muscovy.
So they would probably just continue to invade the smaller nations.
Then they may take on Poland on 2 fronts which they probably would succeed in.

I don't think the French would we wanted to take over Europe. Under kings French were not as agressive as they became after the Revolution.
They played the Turkish card because the were encircled by the empire, but they had no special sympathy for the Turks.

sultan suleiman killed his own son out of rumor. thats the main reason ottomans fell into decline. If that incident never happened maybe ottomans would have been transformed to some sort of soviet structure with more fire power and kept on conquering
