The horse move like that because earlier in Indian armies cavalries were used to jump over the walls. you know step back take a long jump and quickly move sideways to prevent tripping. the horse in chess mimicks this pattern only.
Similarly Elephant(in west known as Bishop) just tramples over the enemy but due to limited/restrained vision it moves in one direction only.

I have a theory as to why chess players point with their middle fingers: When moving pieces, it's only natural that they grab them with their thumb and index finger, so they point with their middle finger in case they need the other two fingers for holding a piece while pointing.

I know the answer of the first question, it is a subtle repressed expression of the passive-aggressiveness of the player. Coz simply waving your middle finger right upfront at your opponent's face is a more active-aggressive approach. Chess players are sneaky.
