Tuck into this cozy AF cross between chicken & dumplings and a pot pie, courtesy of my friend Ben Harrison, co-host of funny, irreverent Star Trek review podcasts The Greatest Generation and The Greatest Discovery, as well as the war movie review podcast Friendly Fire. RECIPE FROM BEN . 5 Lbs bacon About 2 cups of diced aromatic veggies. Whatever you want. I used: shallots, fennel and carrots. You could probably do apples, other root veggies, garlic, onion. Empty out the fridge. A few of cut up mushrooms 4 boneless skinless chicken thighs dredged in flour 1 beer. A lager or a brown ale. 1 recipe of buttermilk biscuits: Herbs that you like. I do a few sprigs of thyme, generally, or maybe sage Chop the bacon up and cook it off in the bottom of a dutch oven. When its crispy, remove it from the pan with a slotted spoon and set it aside. In the hot bacon fat, brown the chicken thighs on both sides. You dont need to cook them through, just get some brown on them. Set them aside as well. Assess how much fat is in the bottom of the pan. I often remove about half so my dinner isnt greasy. Add the chopped up veggies to the fat and let them brown up and soften. Add your mushrooms and let them cook a bit. Once they have softened a bit, put the bacon and chicken back in the pot with their juices. This would be a good time to season your stew, so add salt, pepper and whatever other herbs/spices. This is a good time to preheat your oven to 450. Pour in your beer. Youre looking to just cover the contents of the pot, so if one beer isnt enough, fill the can with water and add water until theres enough liquid. Bring it to a boil and then lower the heat and simmer to reduce it a bit. Make biscuit dough and cut out biscuits. Keep them in the fridge until the stew is ready. Melt some butter with herbs and pepper in a small pan. After about 30 or 40 minutes of simmering, the stew should be somewhat thickened and reduced. Float the uncooked biscuits on top of the broth. Brush the top with the herbed melted butter, and put the entire pot into your oven. Cook for 20 to 25 minutes or until the biscuits are nice and brown on top

Honestly I don't have an oven-safe pot or skillet or anything close to a dutch oven, but even without doing the biscuits on top that looks like an incredible stew. If I really, really hate fennel or can't find it could I sub in something else? Also for the apple juice I assume I should just use half of how much beer I would use, right? Like six ounces or so?

i like to see how you are always trying a lot of new things, because usually when people start making any kind of success they tend to stick to a formula or something. i admire you and the way you do things organically, always experimenting new video formats and everything. keep on cooking, friend. we're loving it.

This recipe looks amazing. I'm so glad you narrated the episode. Without your voice, it wouldn't have felt like a Ragusea video at all. Even if you're not in the video, this feels 100% like a Ragusea video, minus the difference in lighting but I can stomach that, no biggie.

As a bit of a Chinese / Vietnamese twist, try this recipe but with some chinese 5 spice. It totally brings it to a new and unique level. Chinese 5 spice in a hearty American western, Russian, or French Onion soup or stew is something sooooo worth trying.

I think my boyfriend may like this. I'm going to give it a shot. It is Halloween soon though so I may prank him by putting digestives (English biscuits) on top instead mwa ha ha.

Why do most people seem to know people who cook food with posh herbs and stuff? I'm sure the majority of people just cook some cheese on toast or steak and chips.

Not gona lie Adam, I like your camera work more. Cleaner with a better concentration on accurately portraying the subject, less clutter too. It's good for food vids.

The virtuous person I pretend to be: Ohh, nice try, but you have to ply me with more than just beer and chicken to get ME to top a biscuitActual me: (No you dont)

This man really didn't put any salt and pepper on his chicken or vegetables? Salting it only after adding liquid is ridiculous. Good recipe otherwise.

The phrase lawnmower beer has induced lawnmower beer cravings. Do I miss the summer days, that came to mind when you mentioned lawnmowers, already?
