This isn't really a recipe. To make a fruit syrup, put some fruit in a pot with a little water and boil it until it's starting to fall apart. Strain it through a sieve, discard the solids and rinse out the pan. Return the juice the pan and combine with up to an equal quantity of sugar. (Be conservative you can add more later after you taste it) Boil until the sugar is dissolved and the bubbles start to stack up on each other. Cool and taste. Add more sugar if it needs it, and maybe extra acidity, such as lime juice or balsamic vinegar. Let cool before pouring on ice, which I would pulverize with a blender, or scrape from a wide, frozen pan of water with a large steel chisel. Of you could buy an ice shaving machine

Note: shaved ice is not technically the same as Philadelphia style water ice (for the people who didn't ask)
Water ice is churned kinda like ice cream, which gets the crystals REALLY small (which is why it melts in your mouth so quickly. They syrup is also usually pre-diluted THEN frozen as opposed to flavoring the ice with a syrup like a snow cone.
Philly water ice is a distant cousin of the Italian granita made with a slightly different method, which i think is interesting.

adamragusea: here's a no stir, no machine, ice cream recipe that is idiot proof:
gently fold one can (400ml) of sweetened condensed milk (sweetened is important) into 500g of heavy cream, beaten to stiff peaks, put in a container and pop it in the freezer for at least 4 hours. done
the condensed milk can be mixed with whatever flavor you want, berries, candied fruit, macha powder etc. to get any flavor ice cream. I made cardamom ice cream recently. greetings from Germany

I just went and made my own syrup with blueberries, thanks. I've put it in a fridge for now, so we'll see how it turns out tomorrow. But I've gotta ask, can you do this with lemons or limes as well? I'm up for something sour, but kumquats are probably a little bit tricky to find where I live. Or do you have any other recommendations for sour fruits to do this?

Lol, this is kinda funny. I was thinking about snow cones today and thought my daughter would love to try them for the first time, then you went and posted this video today. Well, I know what her and my weekend project is now going to be. Thanks Adam! I'm sure my 5 year old also will be giving her thanks while eating a yummy blackberry snowcone on Sunday.

A word of warning: When using a chisel, NEVER have the hand that isn t holding the chisel in front of the blade. I nearly cut one of my fingers off in a woodworking accident. Expensive surgery and months of physical therapy saved my finger, but you can avoid that by always keeping the hand that s not holding the chisel behind the blade.

Here in the Netherlands, it is very common two have syrups like this in the house, and no matter what fruit it is when you add it to water it is called 'lemonade'. Works really great on snow too. My favorite for snow so far though is the mint syrup from Monin. Works great with milk too for a really refreshing summer treat!

Adam, love the videos, just wanted to point out a difference. Shaved Ice vs. Shave Ice. The cold treat from Hawaii is Shave Ice, Native Hawaiians will be quick to correct you, because the term actually originated from the Hawaiian islands. Shaved Ice is what you will find from countries such as Taiwan and China.

if you like the sweetened condensed milk with shaved ice, you might like halo-halo! it's a filipino shaved ice desert, which is basically that but with add-ons such as red beans, ube ice cream, leche flan, nata de coco, jackfruit, and other things! (it's so good honestly)

just cut the pomgrenade in half and smack it while holding it over a bowl with sth like a very big spoon or a glass bottle. the seeds will drop right out and if you hold it close eneugh over a bowl it wont make a mess.

There are way easier ways to prepare pomegranate. My favorite one is to cut it in half along its equator, score of the ridges and tap it with a wooden spoon over a bowl. There are lot of videos showing this method
