Modified corn starch, commonly found in instant pudding mix, is a magic ingredient for making moist, dense yet soft cakes. My mother-in-law, Gretchen Prisock, demonstrates her signature cake, and food scientist Dr. Curtis Luckett of the University of Tennessee, Knoxville, explains why the pudding powder makes the texture so good. The study that determined the ideal ratio of modified cornstarch in cake (not free): Dr. Luckett's lab at UTK: One source of unflavored pregelatinized starch (not an ad): Hattie's Cake 1 15 oz box super moist yellow cake mix 1 6 oz box instant chocolate pudding powder 1 8 oz container sour cream 3 eggs 3/4 cup water 2/3 cup vegetable oil 1 teaspoon vanilla 1 cup chocolate chips Pre-heat oven to 350 F. Mix all the ingredients until smooth. Heavily grease a large bundt pan with nonstick spray (ideally the kind with flour in it, pour in the batter, and bake for 50-55 minutes, or until the cake seems to pull away from the edges and a knife or skewer to the center comes out clean. Let cool 5 minutes before turning out onto a plate

okay so i need help. i want to make this so bad but imma make this extra hard for me: instead of a chocolate cake i want to make a lemon blueberry version of this. unfortunately i live in germany and i am having a hard time getting the ratios right. i found a 375g lemon cake box mix and a 80g package of instant vanilla pudding mix. now Hatties cake calls for i think 6oz of Jello which is like 170g of pudding mix. i bought two but it seams like a lot also. the cake mix calls for Butter and other shenanigans. should i ditch the package instructions and do it like in the video (with the oil and the sour cream)? im like. this is so easy bUT ALSO SO HARD

i studied food science myself and also am a product developer. just be careful of what starch you buy online as there are many with different properties and functionalities. that 10% replacement is not representative of all starches. the modified starch in itself can be processed in a multitude of ways leading to more efficient outcomes or less efficient depending on what you buy.

The retarded Wayne Rooney lookin ass scientist literally says there are no ingredients in that cake mix that he wouldn't give to his children. Think pal There is artificial colors and flavors in the mix which are petroleum based and can lead to irregular behavior in kids. That dumbass Tennessee school should fire this schmuck

Cannot you just use your cake liquid and boil a cornstarch in it, then let it coool and add everything else from a cake mix to it? Shouldnt that make the same effect without altering taste (flavourings of instant pudding) and a hassle of getting premodified starch thats probably a wee more on expensive side?

Since you make top quality informative videos about cooking, I would love to see you make video/s about cookwares. Particularly cookwares that are given a bad rep in the media(like teflon pans, aluminum, etc. Just to sort of enlighten people who believes fear mongering videos about dangerous cookwares.

Cake release is the best way to guarantee -- and I mean guarantee -- no sticking. There are commercial versions, but it's easy to make it yourself with equal parts by volume vegetable shortening, vegetable oil, and flour. You can make a large or small amount, and it's shelf-stable for months.

Hmm. the day before this video dropped (Sunday) I made a peach cake and the recipe called for instant vanilla pudding. I was like seriously? But I added it. Very very good cake. Very strange you made this video the day after I was wondering about this.

make millionaires shortbread its one of my favourite desserts ever, ive literally won a contest for making it classic butter shortbread, topped with caramel and chocolate. basically a fancy Twix bar, but so much better: )
