I'm a personal opinion that the best way to put an onion on a burger is as crispy onion straws, though potato chips are an okay substitute (though the pungent onion really is better. The extra crunch holds up to all the moisture but I think the less overwhelmingly oniony taste means that I can enjoy the beefiness of the burger more

Actually there is a way to get the burger pink in the middle and crusty on the outside. Freeze them. All the way. Then just defrost them a little bit, and the surface won t have any water crystals that will explode and they won t explode and the inside will still be solid, so itll cook slower

One tip I love to do is to take the cheese squares (which my family calls cheese blankets) and fold the corners towards the middle making it a smaller square. This gives you a thicker layer of cheese that doesn't melt off the side of the burger.

Biggest culinary culture shock I've had in the USA is pink burgers. Us Brits love a medium rare steak but I don't know anyone who thinks a pink burger would be safe.
(Emphasis on thinks there. I've no idea what the actual science is)

If you want actually good ground beef, look no further than the middle easterns. Persians have pretty much perfected the ground beef kebab when I find it pretty much perfect.
Add some shredded onion to the meat and mash it in.

To me, in the pan, I prefer to still keep the meat loose. As long as it kinda holds together it starts creating laces of crispy caramelized meat, then with a good scraper flip it, American cheese, 30 seconds and that's it

I thought Adam would touch upon the Oklahoma Onion Burger, basically add a lot of thin onions slices/strings to a thin burger frying on a pan or griddle when you first put them on then flip.

Is it alright to heat butter on low temp like that without stirring? In my experience, the water and oil can get a little too explode-y if you don't stir butter as it's boiling off water.
