Join Molly Baz in the Bon Apptit Test Kitchen as she makes a burnished basque cheesecake. This cheesecake is the alter ego to the classic New Yorkstyle cheesecake with a press-in cookie crust. Inspired by a Basque version, this is the cheesecake that wants to get burnt, cracked, and cooked at high heat. Which also means this is the cheesecake thats impossible to mess up

I made this its so easy. I made it for my friends and didn't tell them what I was doing. I just went at it, putting all of the ingredients together and the parchment in the pan, throwing the cheesecake in there (I had to bake for 70 min to get the nice dark color, etc. Then when I pulled it out, I showed everyone the jiggle (got the laughs, let it cool for about an hour, and then unwrapped everything after it fell and solidified. There were gasps. This is very light, tasty, but very very neutral. it's almost like a cheesecake with the spirit of Claire's angel food cake. It has an eggy, delicious taste that is a great canvas for whatever kind of sweet ganache, acidic reduction, both, etc or whatever other sauce or glaze you want to use. I think all-in-all I spent 6 on the ingredients, so none of yall have any excuse not to make it one weekend. I need to say again it was so easy. I put some pleats in the parchment like Molly did, baked it up until it was the same color as hers, and it literally looked like the recipe pictures.

I wonder how many eye rolls and other annoyed looks that Andy has earned from his co-workers during the time he has been on camera in the test kitchen. It happens a lot. If it happens a lot on camera you can only imagine how much it happens in the hours when there are no camera's rolling. I don't dislike the guy really. but his slightly egoist personality doesn't do him any favors when he speaks. :-I

I made this cheesecake several times already and it's literally the easiest cheesecake/cake I've ever made and still sooo impressive and so delicious The only thing I changed is that I did half white half brown sugar and I felt like the brown sugar complemented the burnt flavour really nicely. Anybody else reminded of a german cheesecake? I mean there is no cream cheese in a german one but it is very similar germans also put fruit inside makes it even juicierbut we also cool it over night in the fridge which makes it a perfect summer cake

I made this recipe it turned out incredible. i topped it with a blackberry lemon sauce and fresh blackberries, and it balanced it out perfectly also, it's foolproof; i've never made cheesecake before, so telling me to burn it was no problemo: ) happy baking

Poor delicate Andy. In high school, my favorite snack was a Triscuit, with a square of Gruyere, a schmear of goat cheese, and a dollop of thick soured cream on top. I could pound down a dozen. When I'm dead, they can put my arteries on display.

I can't get behind this. I never liked the flavor when I accidentally burnt the top of my cheesecakes. I'd try and remove it. Plus, I love crustI have seen these recipes and I just don't want to waste all the ingredients on something I may not like.

Thank you for doing this. Some idiots in Turkey are trying to make this cake look like as though it was the hardest thing to do. I am really glad to have seen this video. Add some Turkish subs. and you will definitely get more views.

If youre looking for an extra light n fluff burnt cheesecake with a real good jiggle, then youre exactly where you need to be. Also, apparently Bon Appetit just caught wind of the mannequin challenge so. theres that to look forward to.
